Snack ideas for todder on elimination diet

Makingmama · 12/07/2012 09:58

Hi, looking for some more ideas please apart from never-ending rice cakes and goats yogurt!

Ds 3yo is starting an elimination diet of no: gluten, cows milk protein, nuts, soya and corn.

Thanks Smile

Also any recipes for corn and gluten free bread?

Carrot sticks, fruit (esp. summer fruits peaches etc.) These are often riper if bought from a market rather than a supermarket so can be eaten the same day rather than left to ripen in the bowl. Raisins?

Can I just check why your DS is on cutting out gluten? Has he been tested for coeliac disease? It is really important that if you suspect gluten may be a problem, you get him tested while he's still eating gluten regularly as he can't be tested once he's gluten free and it can be very difficult to re-introduce, particularly if his symptoms drastically improve.

Makingmama · 12/07/2012 10:42

Yes he's doesn't have celiac disease, however the gastroenterologist has said he has a severe intolerance and he's positive to the gene so he's not to eat gluten/cow's milk protein at all. Testing the corn (which i'm 99% sure is a very big problem), soya, nuts (he has a type 1 allergy to peanuts anyway) and eggs. He also has a type 1 allergy to sesame seeds.

I had to put him on gluten for 6 weeks at the beginning of the year for testing...6 weeks later he was so poorly he was rushed into hospital to rule out leukemia! He'd lost a lot of weight, severe tummy ache daily, diarrhea, reduced appetite, bad pains in joints (hips/knees/ankles), petachie rash all over, very distended tummy, high liver enzymes and some other funny blood work.

He's just had an endoscopy and colonoscopy. Upper GI tract all good. Lower GI - gastritis, duodentis and pancolitis (inflammation of the entire colon). They said the pancolitis is acute so they think there are more foods he's intolerant to that is causing this damage. Hence begining this elimination diet initially to see if we can rule out common culprits first.

The corn list is scary...i'm not sure about the gf breads etc he eats now! Sorry that's quite an essay!

Oh dear, poor thing! Sounds like he's really been through it. I hope the elimination diet helps. Sorry I can't be much help with snack ideas simply because my DS2 can have soya and corn (allergic to milk, wheat, eggs, nuts plus DD1 has coeliac disease). However, Doves Farm do gluten free white and brown bread flour that doesn't contain corn or soya and they have recipes on their website (as well as on the packet itself). You'll probably need some Xantham Gum and gluten free baking powder too. Doves Farm also do pasta made from brown rice, available from Tesco. My kids like King Soba rice noodles too (also from Tesco I think, available in white or brown). What about Mrs Crimble's coconut macaroons or jam coconut rings as a treat? Also, Innocent fruit tubes (they look Frubes but are just fruit, no yoghurt) or jelly made with fruit in it.

I always recommend banana and avocado mashed together as a great pudding for kids on dairy-free diets as it is full of the 'good' fat they miss out on.

Just wanted to add that the protein in goat's milk is very similar to cow's milk so can often cause the same symptoms. I believe Holland & Barrett sell a dairy & soya free yoghurt made from pea protein that might be worth trying.

Makingmama · 13/07/2012 08:15

Thank you lots of things I can use there! A lot of the gf pasta is corn so will check out Tescos. Will get some Doves Farm flour. We do the coconut macaroons for treats already.

Will try the banana and avocado - yummy!

We've alreay done an elimination of the goats milk with no change/reaction so for now it's a relief he can still have the goats milk/yogurt etc! It was hard when he couldn't (this is the second strict elimination diet).

He didn't like the pea protein yogurt (can't say I blame him!)

Have been looking a lot into the GAPS diet for him and think as we are having to restrict so much again this is leading me into starting the intro within the next 2 months! They use a lot of soups so going to make a big pot today and let him snack on soup too. Oh and homemade pate on rice cakes.

Nakd bars are "free from" a lot of things and yummy. My friend uses them a lot as snacks for her milk, soya and gluten intolerant 3 yo. The only flavour I have had had nuts in, but possibly other flavours don't. I get them from Tesco and health food shop. Try health food shop too for snack and treat ideas.

freefrommum · 13/07/2012 10:40

You can definitely get the Doves Farm brown rice pasta (no corn) online at Tesco's even if you can't find it in store. Pate is a good idea, full of iron! Good luck, hope it goes well.

Makingmama · 14/07/2012 13:56

Thank you! Will check out naked bars, I'm sure all of them have nuts but maybe the cocoa one doesn't from memory, will look today! Visited health food shop this morning, not much they could help with as his choice is so limited. Made pâté with liver, onions, garlic and goats cheese.

The coconut macaroons have egg in Sad !! Made a big pot of chicken, veggie and rice stew so that's on stand by for hunger pangs!

Wondering how I could make flatbreads in a pan rather than bread (my oven has just broken!)?

OP posts:
freefrommum · 14/07/2012 15:54

Sorry, you didn't mention eggs in your original post so didn't realise. Nightmare about your oven!!!

Makingmama · 14/07/2012 19:12

Ah sorry! There's so much I keep getting muddled (not when actually feeding him though!) nothing at all in sainsburys apart from fruit and veg! But my dm gave me a great idea...sushi balls. I've bought sushi rice, nori, porcini mushrooms, salmon and tuna. so going to make lots of little rice balls and decorate with seaweed as little cats etc, these will be great little snacks - so pleased, and I can make them in bulk and freeze.

Also found a recipe for flatbreads. Gf flour, cumin seeds and yogurt (goats), mix, roll out and shape into circles, grill - done Smile.

Feeling much better now I have a few things I can use to keep him happy!

Thanks
