Help - gluten free chocolate cake recipes please :)

It's DDs 3rd birthday party on Sunday and I'm attempting to make her a gf chocolate cake decorated to look vaguely like Minnie mouse!!!
The problem I've got is that flour less choc cake is usually really dense and brownie-like in texture so not sure how well it'll hold rolled out icing, and the only other recipes I can find are for gf sponge cakes which look like they might be really dry.
Any tried and tested cake recipes out there???

Hi there.

There's another thread on here called A plea for cake recipes and in it there is a post from trixymalixy linking to a vegan choc cake recipe. I've just made some with Doves Farm gluten and wheat free plain flour.

They look and smell yummy. Too hot to eat yet tho.

I made muffins and cooked them for 30 mins. Hope this helps.

Also on the back of the doves farm flour bags theres usually some recipes so uf you can use egg try one of those with some cocoa added. when i did home economics many mamy years ago at school, I'm sure we were told to swap out an ounce of flour for cocoa but i can't remember exactly.

Use Doves Farm gluten free self raising flour in place of wheat flour and as mumat39 suggested, swap out 1oz flour for cocoa powder. You should also add 1tbsp water for every oz flour. For a cake with 8 (or 7) oz flour, use half a teaspoon of xanthan gum, which you will find with the gluten free flour in the supermarket. You should also double the amount of baking powder in the recipe - I don't find the Doves SR flour rises so well without this extra help.

I make this choclate cake which is eggless, gluten free and dairy free and is very moist for anyone who visits and has a food intolerance. I am gluten intolerant and cannot tolerate lactose either.

I use Doves Farm Gluten Free Self Raising Flour (blue bag) flour which already has Xanthan Gum instead of the normal flour in the recipe but all else is the same as the recipe.

The cakes came out really well. I managed to get 9 muffins that looked and smelt really yummy.

I didn't have any veg oil so used one called sunolive so there is a bit of an odd taste. Almost like garlic - which is wierd, but I've still managed to have nearly 3 of them and they are huge. Confused

I cooked them for 30 mins this time and used a muffin tray - that was brilliant advice thanks as the first lot I made collapsed. I'm not a very good cook at all but even I think managed these so agree that it's an easy and brilliant recipe.

I also didn't have white vinegar so used apple cider - so that may have also contributed to the taste.

Do you know if I could just use plain Sunflower oil? I'm a bit paranoid about the fact that vegetable oil might contain soya and or rapeseed, both of which DD is allergic to.

I've been linking to your recipe all over the place so hope that's ok.

Hi I've had plenty of success adapting normal sponge mixes using doves farm flit but gave recently moving to recipes which use melted butter and things like buttermilk in them as well. Agree with all the comments re extra liquid, if you can do milk try that as well. Muffin mixtures are typically more 'wet' so do well. Am also working my way through "red velvet chocolate heartache" by Harry Eastwood, she uses rice flour and vegetables to make cakes;t dh cannot tell the difference between those and non gf, AND they get in one of the 5 a day. Bloody delicious!!

Glad they worked out! I use sunflower oil and they taste fine.

I did exactly the same as you first time, which is why I know you need a muffin tray Blush!
