Panasonic SD2501 breadmaker. Can't make good GF bread. Help Please.

Hello.
I recently bought the above breadmaker and have tried making the Doves Farm GF bread from the recipe booklet, but have had no success with it so I'm not sure if it's the breadmaker or me.

DD can't have eggs so I'm using Ener-g egg replacer but the bread is still coming out very dense and not at all nice. It does't seem to be rising at all and the height is lover than the kneading paddle.

The bread machine was also quiet the first few times I used it, but started making a 'knocking' sound when it was on the kneading cycle.

Can anyone help me with this please? I would have thought the recipe from the leaflet should work. I've tried this about 6 times now with quite a few bags of the Doves GF/WF white bread flour but can't get it to work. I've been careful with the quantities and the order that things go in.

If it sounds like a machine fault then i'll have to send it back. :(

I've got a Breadmaker (not the Panasonic though) and find it easy to make lots of different types of bread with it, and there's not that much difference between the different makes.

I went onto the Doves Farm site and found instructions on how to make it at home but the instructions were for making it by hand - I wonder if this might be the problem you're having?

If you haven't done so already I would urge you to go and have a look at their site. I wish I knew how to put a link to their site but I don't know how to do it but if you Google 'Dove farm' it should come up.

BTW; my Breadmaker makes a knocking noise too when it's in kneading mode, it's the lump of dough hitting the sides of the container.

Thanks PetuniaI have tried the doves farm recipe, there' a machine recipe onn the back of the pack. there is also one on their website.

I've also tried on off one of the threads on here and that rose more than the Panasonic recipe but only in the middle where the paddle goes. The knocking noise wasn't there the first few times i used it with the same recipes but started yesterday.

I habe read that some people had faulty machines so i just want to make sure on here before i try and send it back.

I feel so awful that I couldn't help another Breadmaker when she needs it, particularly when you're not doing it for 'fun' like me.

Obviously, if you think the breadmaker might be faulty do get a replacement - get one anyway, you never know.

Have you thought of writing to Dove farm and explaining the problems you're having? But you probably have.

Oh no!!

I saw the thread title and really hoped it wasn't you (no offence meant obviously).

Mine certainly makes a knocking noise when it's kneading.

I'll buy some Dove's farm flour this weekend and have a go. Maybe it's the egg replacer? I've got Orgran so will give that a go (fuelled by my cake baking successes this week).

Can you post your recipe or a link to it please?

Sorry - it is me. I decided to keep the machine as it was going to be a bit of a faff to send it back.

I've tried a few times but the one from the booklet just doesn't rise and I don't know why.

I'll type that recipe out in a bit.

I tried one from this post and it was much much better but looked a bit like a bowler hat with a raised middle bit and flatter edge, almost like where the blade reached to was fine but the rest didn't mix properly.

It's such a shame after spending so much on a machine and not getting it to work.

Petunia, londonmum123, kindly answered a post about which breadmaker I should go for. :)

oops sorry. here's the link. The recipe is by yestheyreallyareallmine and is about half way down the page. I used 1.5 teaspoons for the yeast.

Mumat39 - 7.5ml of salt?? Assuming this is just 1.5tsp. Don't worry about typing booklet recipe out - I'll dig my booklet out again. Will aim to bake on Saturday.

I sliced my latest attempt at the Gf bread using the recipe by yestheyreallyareallmine and it had quite a few bits of what looked like raw dough or unmixed bits. I'm sure the machine just isn't mixing properly. does tjat sound like a plausible reason?

hi notpickreally. Do you have the same machine? i also noticed that there were some unmixed bits in my bowler hat loaf. I've followed the recipes I've tried really closely. my poor kids won't eat the bread. it doesn't seem to want to brown in the toaster and has a really squishy texture. i wish i could make the thing work.

londonmum, i called panasonic's customer care number and they think it might be a dodgy machine. So I'm going to try and see if i can send it back after all. Thanks again for your help.

no. i have an older model that my mum let me borrow as I've just been told to avoid wheat to see if it helps my ibs. i can't stop dreaming about bread now that i have to avoid it. :(

GF bread is always dense. That is how it is. I make it in a Kenwood breadmaker. It is more like a heavy cake. Not like normal bread.

That said, it should rise higher than the paddle. It does not sound as though it is rising. Are you uisng the right sort of yeast?. Ordinary breadmaking yeast does not work in a breadmaker (unless you activate it first).

Easier to get special yeast for a breadmaker.

Thanks Morebeta. that's what the helpline said. i use Doves farm yeast which is suitable for use in breadmakers. I think it is a problem with the mixing and the also the rising. Also it was super quiet when i first used it. Then on the 4th or 5th attempt it started to make the knocking sound with the same recipe. I've used about 4 bags of the doves white bread flour but it's just not working for me.

Is the padle actually going round and is it getting warm during the rising stage to make the yeast do its job?

Thanks again Morebeta. I appreciate your help. The paddle is going round. that's what's making the knocking noise. I'm using the GF program which is 1hr 50 mins. I had read thaf the quantities and order of ingredients was important so have tried to follow the steps. I think tje bowler hat shape possibly proves it's not all being mixed that well. i think i will try and send it back as it's an expensive machine. the ingredients aren't cheap either when the results are so.poor.

Did you have to 'learn' how to use yours ifswim? or was it simply a case of following the recipes?

I have a feeling the motor is turning but the paddle itself is not actually going round. On my Kenwood machine the hole in the middle of the paddle eventually got too big so the axle just turned and the paddle didnt rotate. It made a knocking noise too. I eventually jammed it on the axle with a bit of paper clip. Works great now.

Send it back.

Ooh, MoreBeta, aren't you clever!?! The last loaf had a great big huge hole in the bottom and the paddle didn't get stuck in it. The others I made, had the paddle completely baked in the loaf. Well done and thanks for your help. I'll definitely send it back now. It's good to know what the fault is. I could try and fix it like you did, but at the price I paid, I'm thinking maybe not. At least I know it's not me being my usual dim self :)

Just in the supermarket so have put back gf flour! Hopefully the new machine will sort it out. Keep us posted
