Not likely i know but does anyone by any chance have a simple gluten and dairy free cheesecake recipe?

But how about replacing the crust with crushed gluten free digestive biscuits and melted margerine ( like you would for a non gluten free non dairy free one)?

ive not tried this as DS is allergic to nuts so no good in our house.

Pizza dough is possible as long as eggs ok?this is the recipie I use in my bread machine for my dad - can it be adapted to school?

3.5 cups gluten free bread flour, 1 cup tepid water, .5 teaspoon salt, sachet yeast, 1 egg, 1/4 cup olive oil, 2tbs honey. combine to form a dough knead for a bit leave to rest and knead again before using. Its a bit like rolling pastry rather than dough iyswim but does taste ok

Thanks Alison - I have to nip out. Will look at that as soon as I get back.

I can get ingredients tomorrow but the recipe will need to be simple as the boys have LDs and the teachers try to encourage them to do as much as possible on their own.

Given that several can't have gluten or dairy I wish they would think about what they are going to cook a bit more ...

blimey, that is a tall order, and am astounded (and very grateful, for future reference) that posters have come up with a solution!

could you have a tactful word to the school? it's a bit bonkers, if several cannot have gluten and dairy, to be coming up with a menu like that... I would freak if dd1's school did that to me.

alternatively, suggest that they do the shopping for it as part of the community work - then the staff can source the ingredients, and that might make them realise how imparactical it is... dd1's last school used ot take her to the supermarket the day before cooking, so she shopped and sourced stuff first, and they had to work out whether the supermarket had what they wanted etc.

Hmm, re-reading your post properly I've realised that you need a quick and easy recipe so the piginthekitchen one probably doesn't fit the bill. I agree with alison222 that the base should be quite easy using gluten free digestives and Vitalite/Pure spread then a filling using tofutti dairy-free soft cheese instead of normal soft cheese? I'm not really into cooking myself and only do it when I really have to but have got pretty good at swapping ingredients for alternative freefrom versions!

It is bloody difficult that they have decided to do Italian day Hmm but they are usually not quite so crap challenging with their recipes.

I shall hit my health food place in the morning, send in what substitutes I can find and let them get on with it. I am 99% certain that Pagboy won't eat it anyway but I have to assume he might.

Silver - he does the shopping bit with school. He loves it Grin and he bought a DVD on his own when I took him to the shops on Saturday.

Also some of the supermarkets do gluten free pizza bases - don't know if they are dairy free though - if the school don't want to make the whole thing and just the paste and toppings.... - though I'm not sure that soya cheese melts on top of a pizza.

Why could they not do spaghetti in tomato sauce? so much easier.......

the dietary specials pizza bases are dairy free (have some languishing on a shelf from a moment of madness while shopping...)

Pagwatch - dd1 loves shopping too. she is probably at ehr best behaved in asupermarket, weirdly - pushing the trolley, loading up, handing stuff to the cashiers (in the order of importance ot her Grin which means stuff like strawberries ends up at the bottom of the bag as it is vital they go through first) and packing the bags. odd child.

brilliant re: shopping for dvd.

and good luck with ingredients sourcing - you have a fab health food shop near you, don't you? I raid it whenever I am over that way.

you can make a fairly simple "cheesecake" by warming up some non-dairy milk and cocoa powder and then adding 2 very big spoonfuls of cornflour. heat until it's really, really thick.
then with a stick blender or a food processor you whizz up a carton of silken tofu, add your chocolate mix, chuck in a melted bar of dark chocolate.

your base would have to be some kind of gluten free biscuits, crushed and mixed with some dairy-free spread.

Yep we have a great health food store. I am heading there in a minute. Excellent supermarket technique from your ddGrin I should be putting wine and chocolate through first.

it is good! i created it by combining a recipe for "chocolate pudding" from an ancient recipe book (that's the cocoa and cornflour bit) and a silken tofu pie recipe from my PPK cookbook.

you can make it without the melted chocolate, but that gives it a nicer flavour and a slightly thicker texture.

it's best eaten the day after you make it for some reason
