Plea for cake recipies for egg nut chocolate free cake that are not "oily" once cooked

Ds is allergic to eggs nuts sesame ( and fish) and cannot eat cocoa powder or brown chocolate ( makes him vomit - but white chocolate seems ok).
He also doesn't like fruit very much - apple and raisins are Ok but he won't eat most other fruit.
Someone told me about using vinegar and bicarb in place of the egg. Does anyone have any tried and tested recipies I could try?

Banana bread is quite cakey and most recipes are egg free if that helps.
Amazon have some good cook books, my favourite is "allergy free cooking" by mini C.

Thanks for replying but Banana is a fruit and the only fruit he will eat is apple or raisins so banana cake is a big no no.
I really struggle to find recipies that do not involve fruit nuts or chocolate as well as being egg free as most of the ones in allergy free books have at least one of these.

If you buy orgran egg replacer, you can make pretty much any cake recipe using it.

this is the one I've found that works best with the egg replacer. You could just leave out the lemOn zest and poppy seeds and maybe put some vanilla in?

trixymalixy · 20/01/2012 16:22

this carrot cake recipe is very good.

Northernlurker · 20/01/2012 16:24

Do you have to tell him aboit the banana in the banana loaf? He might not connect the cake with the fruit. Would make your life easier!

alison222 · 20/01/2012 16:42

trixymalixy maybe it is me but I have always had disasterous results with egg replacer.

The carrot cake one has nuts in it - but I presume I could leave them out without too much problem?

Northern DS should be a food taster he identifies the slightest little change in anything we cook/buy( apart from the allergy limitations which would definitely prevent him from being a food critic) and he does not like banana so it would be a waste of ingredients. He used to eat them as a baby/toddler but won't touch them now.

I've had more than a few disasters with egg replacer too, which is why I posted that lemon poppyseed recipe even though it has lemon in as it is the one I make that works every time.

I left out the nuts in the carrot cake recipe and it was fine.

what sort of cake are you looking for? A large birthday cake type, cupcakes...? I'm sure i can find a suitable recipe... Smile

alison222 · 22/01/2012 12:03

just every day cake really

try searching for vegan cake recipes. This is what I do for DS who has an egg and fish allergy. Alternatively any 'normal' cake recipe that only uses one egg I just replace with 1tbsp vegetable oil.

Have you tried gingerbread and the like?

alison222 · 22/01/2012 12:41

gingerbread men, shortbread etc. are staples in this house. I was looking for something "cakey" that had a proper cake texture so that we can all eat it. I have found DS likes egg free american muffins that I found in the free from section in Tesco's but they are expensive compared to making cakes at home and he is currently eating me out of house and home ( growth spurt???)

What about something like this? egg free sponge

I've made one in the past with condensed milk and it was nice, slightly more muffing in texture but it didn't make it to the evening!

inmysparetime · 22/01/2012 15:44

Tesco sliced fruit loaf has no eggs or nuts, and is good for everyday sweet carbs (which after all is what cake does)

alison222 · 22/01/2012 19:39

I will be trying the carrot cake and the lemon cupcakes thanks.
also found this recipie which I might have a go at as it lookis very easy and quick - and this one which looks yummy. Will report back as I try them. The cupcakes may be last as I don't have any egg replacer in the house -I gave up on it after lots of disasters. Also saw a few interesting cheesecake ones too...... Mmmmm. Shame I have just gone on a dietGrin

Quick update. - we tried the "best ever ginger cake" today. Seriously yummy - Very sweet and sticky though but a great "cake" texture - you didn't miss the eggs. I think this one will become a staple in our house.
Once we have eaten it ( It made LOADS!!!) I will move on to try some of the other recipies.
