Now in a total muddle and getting more upset by the day

When having DD (now 4y/o) I had numerous hours in the operating theatre and a 6+ unit blood transfusion. Long story short, I have just been diagnosed with being extremely sensitive to Cows Milk which I never was before DD. I also have impaired glucose tolerance (or familial pre-diabetes). Also presented as sensitive to eggs (DD is allergic) sunflower seeds and yeast.

I am going to move the testing on now as I don't know if its the Casein or the Lactose... does anyone have a view on which it is more likely to be??

I am at a total loss of what to eat for breakfast, I have a full time job and do the school run in the mornings every day so its always busy. With my glucose issues I cannot just have bread based products as it just dumps glycogen in my liver which exacerbates the issue and piles on the weight... which I am desperate to loose. Too much fruit gives me a headache (too much fructose).

Ahhhhh! Lunch and onwards are fine but I cannot have chicken salad for breakfast! :)

I have been off all diary products for 10 days now and can already notice massive improvements, such as not being exhausted 24/7 etc, less bloat etc. However, even with cutting out my enormous butter/cheese/milk/egg intake my weight remains high, I can only put this down to moving back to carbs.

So, please does anyone have any ideas? I'd very much appreciate it. Something quick and easy too, or something I can make and store?

what about oatbran made with water and sweetener. It is lovely , but I must admit I make it with have skimmed milk and half water. Tatses like poorridge but better for you as less carb ..I think.
Also maybe try having a protein drink made with water to fill you up quickly.I use this company and have the choc one

Also soya and linseed bread is the lowest in carbs I can find and a slow burner

I have porridge made in 3 minutes in the microwave. You can add flavourings of your choice. I make mine with water as i don't like things too creamy, but you could try coconut milk. You can get gluten free oats in most supermarkets free from sections - so you could make your own muesli or flapjacks etc - which are a good boost in the morning.
With glucose intolerance is it sucrose and fructose (complex sugars - disaccharides ) or glucose (simple sugar - mono saccharide) that is the problem? or if it is similar to diabetes is it the amount of grammes per hundred grammes that you are looking to control?
My DS is sucrose and fructose intolerant and he uses xylitol as a sugar substitute and instead of honey/syrup he uses malt syrups - corn/barley - although you would have to check the gluten content - the one i use is dairy and wheat free - and makes a lovely flapjack!

What about a cereal bar, my SIL can't have gluten or milk and manages to find cereal bars she can eat in the supermarket or is that too carb laden?

How about soya yoghurt with fruit?

Auntevil - I treat it like diabetes, I'm never quite sure what spikes me sometimes as fruit can be an issue. However I will buy some xylitol and test out cooking some things myself. I have just bought some coconut milk for a curry so will try using that more extensively - thanks!

Trixy - the only issue with cereal bars are they are usually sugar laden, However I did check all the ingredients just now and the supermarket and have found one that is 70% nuts so hopefully they will be ok as they have no dried fruit which is like little balls of sugar in my body!
