Advice needed on changing an older child's diet

My DSs were dx at an older age with intolerances/allergies. They had been used to having trigger foods in their diets - and now i've been told they're out completely.
DS2 has been told he has a wheat intolerance and must go GF for 6 months until next appt. This is to add to the lactose intolerance dx 2 years ago.
DS1 has CMP, fructose, sucrose and now on a strict IBS diet - much to his devastation - tomato ketchup out- tomatoes in general (i'm having a little freak out over that bit - as he loves pasta - with tomato based sauces) and other gems.
DS3 was previously lactose intolerant - but has also been dx as wheat intolerant (2 weeks ago) and has swallowing issues.
I've seen lots of threads about starting off from milk/BF and weaning, but any good strategies for withdrawing foods already being eaten from 'stroppy youngsters' would be gratefully received.

This sounds really tough for you and for them. All I can suggest is focussing on what they can have - are there some favourites that they love that you can start giving more often, so hopefully they won't notice so much about things being withdrawn? Even if they are eating more junk or treats than you would like for a while, it might help the transition.

I don't know what a strict IBS diet involves, but there are GF substitutes for most things now - hopefully you can find a GF past a your familiy likes, and experiment with sauces until you find one that works. I don't know how old they are, but maybe they would enjoy experimenting with different ingrdients to come up with a pasta sauce they like.

Some of the things on the diet are easy - no greasy/fried foods (KFC and McDonalds mentioned by name Grin ) . He doesn't drink tea, coffee, fizzy drinks.
Problems I envisage are trying to re-jig recipes. GF is fine - When DS3 did the gluten challenge we worked out preferred products. But IBS includes: spicy foods (no curry, chilli, tomato based foods such as spag bol), ketchup, seasonings (black pepper, chilli powder and red pepper), chocolate or cocoa drinks, vegetables such as (cabbage, cauliflower, broccoli and onions). Lentils had also been ruled out.
He already has fruit ruled out (fructose), but he does love his food and i'm trying to think of some positives for him as he is savoury toothed anyway and would rather have pasta and veg than a pudding (always thought that it was too good to be true Grin )
So if someone could come up with a tasty sauce for pasta not including the above Thanks Thanks Thanks winging their way,

What about GF pasta with tuna, sweetcorn and dairy-free mayo? I agree that no tomatoes is really difficult! DD was recently diagnosed coeliac so had to go gf at age 9 and DS is allergic to milk, wheat, eggs and nuts so food is a big issue in our house too but I have to admit that trying to think of sauces that don't involve tomato is stumping me! Will keep thinking for you...

Thank you freefrommum. My DS loves pasta, tuna and mayo - in fact he loves anything fishy. In fact using alpro soya cream etc - he could have more fish in 'creamy' sauces - with herbs too. Shame the other 2 aren't really fish types Hmm . I just need to sit and think of 14 or so meals and rotate them - adding new ones every so often.

are thy ok with peppers? Slow roasted peppers (and other veg too) whizzed up make a good substitute for tomatoes in spag bol etc...

Peppers are out - but you've just sparked off another idea nellymoo, because carrots make a really nice puree base and very sweet too.
I made a version of a carbonara tonight - with dairy free cream and parmesan, gf pasta etc. It was all eaten - so it couldn't have been that bad! Grin

Roast squash, a bit of sage and some crispy bacon. Thin it out with oatly cream. nom.
