Right dd is allergic to dairy, soya, eggs, wheat, citrus fruit and tomatos.

Tuna Fishcakes

i make mashed potato, put in some of her prescription milk and dairy-free margerine, i then take a small tine of tuna and add to mash and mash it all it.

A good glug of olive oil in a frying pan, make little round shapes out of mixture and then fry until golden.

i serve this with sweetcorn and peas

Will add some more when i can think!

I've just started a new thread to ask how to make porridge from rice and millet flakes

Our homemade burgers were a great success - just mince, onion, herbs, oil and eggs Would an egg replacment work?

Laura032004 · 17/10/2005 12:16

jenk1 - Tuna fishcakes cooking as we speak!

DS loves fish and mashed potato, so this will be a nice alternative for him. He often has trout and mash (to get some oily fish into him). I just poach the trout in water first. It's a pain picking the bones out first though..

PeachyClairPumpkinPie · 17/10/2005 13:10

Ok then- the pizza recipes I used on the other thread- wheat free potato cakes (probably have to make yourself but are yum) or gluten free bread, spread with sweet pepper puree if allergic to tomatoes, or the tomato puree; top with dairy free cheese and tuna or ham, plus veg as will relaistically be eaten and not put child off.

Dairy free pud- take a banana, peel a one inch section of skin back to base BUT DO NOT DETACH. cut out alternate slices of banana, insert a marshmallow into each pace, with a dairy free chocolate button (or a piece of dark chocolate) either side. Re seal the bana with the skin, wrap in foil and bake.

Simple pot roast- put a selection of peeled root veg and diced potatoes in a casserole. Pour over 1 pint stock (we use bovril). Put a small joint (lamb works well, if you choose this add mint, or pork and add leeks and apple). Put lid on, place in oven on a medium to low heat and enjoy your day!.

Chicken grills- make a pattie from minced otr chopped chicken a small amount of potato (sweet is yummy) and apple. If liked, dip in olive oil then in couscous for a crunchy coating.

Fishcakes like above, but made from sardines in tomato sauce if tomatoes ok... I was a terrible baby eating wise, but apparently I loved these.

jenk1 · 17/10/2005 13:13

Just substituate gluten free flour and whatever brand of milk you use (we use enfamil lactofree, most people use nutramigen)and obviously the soya or free from butter.... free from butter has SO much more tatse than the soya stuff IMO!

Yield: 4 Servings
8 oz Left-over mashed potato
3 oz Self-raising flour
2 ts Milk
Salt and pepper
Butter

Knead the flour into the potatoes and milk in a bowl, using as much flour as can be worked into the potato to enable the mixture to be rolled out on a floured surface. Cut into circles with a scone cutter. Lightly grease a griddle or thick frying pan (a wipe with a butter paper works well). Cook for 3-4 minutes on each side and eat hot with butter. (Or whatever!! great with eggs for those who are not allergic, or with any topping)

PeachyClairPumpkinPie · 17/10/2005 13:24

ooh- cook the potato cakes in fat left over from frying abcon and serve with bacon and sausages... forgot that from my childhood- yum!

jenk1 · 17/10/2005 13:33

they sound scrummy am going to make them dor dd,s lunch tomorrow

PeachyClairPumpkinPie · 17/10/2005 13:35

Just thought, they'd make a great topping for a cobbler!!

Laura032004 · 17/10/2005 14:19

We both enjoyed the fishcakes - I had rice milk in mine!

First attempt went a bit sloppy (ds still liked them though), so made some more with an egg in. They were fantastic.

PeachyClairPumpkinPie - are the potato cakes better with an egg in the mixture? Shall try those tonight (did lots of mash!)

PeachyClairPumpkinPie · 17/10/2005 14:25

Don't know about the egg, this is esactly as I pulled the recipe off the net. There are fancy grown up versions about too... hang on....

PeachyClairPumpkinPie · 17/10/2005 14:28

Preparation time less than 30 mins

Cooking time 10 to 30 mins

Ingredients
1 potato
2 tbsp olive oil
85g/3oz emmental cheese, grated
2 tsp curry powder
2 tbsp fresh coriander, chopped
salt and freshly ground black pepper

Method

  1. Preheat the oven to 220C/425F/Gas 7.
  2. Slice the potato thinly on a mandolin or very carefully on a sharp knife.
  3. Heat the oil in an oven-proof, medium-sized frying pan.
  4. Place half the potato slices in a single layer in the pan. Brown gently.
  5. Sprinkle over the cheese, curry powder and coriander and season.
  6. Layer the rest of the potato slices on top.
  7. Put into the oven for 15-20 minutes until the potato is cooked through.
  8. Turn out onto a plate and serve.

Thanks Jenk1 great idea to share favourite recipes. My meals are more of a hotch potch of food rather than actual recipes, but I'll see what I can come up with.

I'm not sure I could have eaten the mash with Nutramigen though. The smell is bad enough without actually drinking it! even after all this time of preparing it. (Actually, DS2 has never eaten it in food, only as a 'milk' drink).

I'll try the tuna mash though. I've made my own similar meal but never actually fried it up afterwards!

PeachyClairPumpkinPie · 17/10/2005 16:17

I haven't tried the nutramigen- is it that bad? DS3 is lactose intol, and he has Enfamil Lactofree.. it's GORGEOUS! Really creamy, I love it on cereal or whatever but I do react to it sadly.

mamaoftwo · 17/10/2005 16:24

Nutramigen smells horrid Peachyclaire. but, its the only thing DS2 is okay with. (He's dairy/egg/soya free). But, it even took him a few weeks to drink it, I had to combine it with the old stuff then gradually increase the amount. Now he loves it to drink - but when it is heated it takes on an even more pungent form and he won't touch it! others here may have had better experiences of it, altough our dietitian seemd to aggree with us!

Just off to cook. Not tuna/mash tonight just good old tuna/sweetcor/pasta/sunflower oil.

PeachyClairPumpkinPie · 17/10/2005 16:32

DS1 had soya.. revolting, and he lost most of his teeth from the sugar content. I'm supposed to drink soya, instead (and I KNOW how stupid I am) I seem to be settling for Osteoporosis- the soya makes me physically nauseous.

mamaoftwo · 17/10/2005 17:08

Agree with you about soya peachyclair! But make sure you look after your bones in other ways just to be on the safe side.
