bread machine

Hi All,

I want ro start making bread using a bread machine, but ds1 is allergic to milk and eggs and I believe lots of bread machine recipes use dried milk. Am I right? Would it be possible to modify the recipes to make them dairy free? Are any bread machines better than others?

There are plenty of recipes which dont call for dried milk in them.

I just have a basic one, my uncle just makes his bread by hand and my mum has an expensive all singing all dancing one, think it depends on your budget and how often you think you might use it?!?

Sometimes I just leave the milk out when making my bread (if I run out) and it makes little if any difference.

If you wanted, you could add a teaspoon more sugar or a vitamin c tablet to help rising or not bother.
It's best to experiment with your machine to see what works for you but i've made fine loaves without skim milk powder including todays one.

Just omit the dried milk - you do not need it.

I don't think the price of the breadmaker is a huge issue. At the moment I have a fairly expensive one which was on special offer. The one I had before was pretty basic and I think it was just as good (worked fine for years until I dropped the inside pan bit and bent it beyond repair).

you can make tasty loafs without any egg or milk. I just use flour, water, yeast, salt and oil.

I have a Panasonic SD255 and none of the basic recipes need milk powder...Its my best friend! It makes me look like a domestic goddessWink

I just left out the milk powder without any problems, and substituted olive oil or Pure spread where the recipe said butter.

Bread machines are a bit of a random adventure anyway IMO Grin

I make my own bread. I don't include the milk. Using milk instead of only water just means the crust is slightly softer.

The recipe I use for a 500 g loaf is:

245 ml water
1 tablespoon olive oil
350 g white bread flour
2 teaspoons sugar
1 teaspoon salt
1 teaspoon dried yeast

I have a Kenwood bread maker (I think the model is the BM250). I've had it for 4 years now and its still going strong.
