Is it possible to make successful egg-free cakes using a normal recipe and egg replacer?

Because I can't do it.

I want to make fairy cakes or cupcakes for dd1 who has an egg allergy.

I made a birthday cake using a recipe that has condensed milk that turned out fine but no success with recipes for small cakes.

I used a vinegar and baking soda recipe and the result looked good but tastes funny and a normal recipe substituting the egg with egg replacer does not work for me - they don't rise and seem greasy.

(I am fairly good baker normally so don't think it's my fault but who knows)

Any tips/recipes welcome.

I use one tablespoon of cornflour (equals one egg) and a bit of water mixed together and they turn out fine. I use soya milk instead of milk also.

I have an egg free cookbook called "Bakin' without eggs" www.amazon.co.uk/Bakin-without-Eggs-Delicious-Food-Allergic/dp/0312206356/ref=sr_1_1?s=books&ie=UTF8&qid=1284311369&sr=1-1. The cakes I've made from there have generally turned out well (and there's even a fairly decent pancake mix too).

BEST EVER RECIPE!!!
After 8 years of having egg allergis child, here is a fab recipe for fairy cake/svanilla sponge mix. (Wacky cake that they made in wartime is great chocolate mix BTW!)

12oz flour
1 tsp Baking powder
8oz caster sugar
250ml Oil (sunflower, olive, veg, etc)
150ml Orange juice
150ml cold water
1 and 1/2 tsp vanilla extract

  1. sift flour & baking powder
  2. Add sugar
  3. In seperate jug, mix oil, orange juice, water & vanilla together and then add to dry ingredients
  4. Quite wet mix so I use jog to pour into cup cases
5.Bake at 160 for 12-15 mins

At parties, there are never spotted by other kids as non egg and sell well at school cake stand!

Last weekend Ds was desperate to make some cupcakes that were on offer in morrisons the ones you just add egg too. We used ener G egg replacer and they turned out perfect Ds loved it :)

We are going to try a plain sponge mix too so I can make his birthday cake.
