I think Jack Monroe has stuff on this and her options as v cheap so worth a try. I think it depends on the recipe, red wine generally seems to be replacable with tea (tanins) and white wine with various vinegars. I've forgotten the beer/ale substitute so you'd need to check their website, but guiness now have an alcohol free version if fhe usual AF lagers don't work.

You can get wine flavoured stock cubes/jellies next to e.g the veg and chicken stock cubes.

A nice sweet balsamic vinegar for some things, or pomegranate molasses.

I also use vinegar in place of it (due to cooking for small children). Balsamic is good and give a nice depth in place of red, I use white wine vinegar in place of white, or maybe cider vinegar would work? (AFAIAA there's no alcohol in any of those)

You can always add a drop of honey (or sugar if you've no honey) to counteract the sharpness of the vinegar, but I find it goes anyway.
