Now that the only thing green and living in my lawn is the dandelions, how do I kill them?

Just that really. At least they're easy to see.
Is there a pet friendly weedkiller I can spray or paint on or am I better to try and physically remove them and their very long tap root?

Leave them

I’ve been giving my lawn a little sprinkle with the hose now and then … no hosepipe ban here.

So many butterflies, bees, birds etc that are drawn to the moisture when everything else is barren.

You don't remove them because that would be thick. (Yes, I'm being a bit blunt as I've had enough of people trashing our environment).

The bees need dandelions in spring.

If we run out of bees we won’t actually be able to live - so you will effectively be saving children OP 🐝💖☀️

It's best to leave any green vegetation during a drought. Better for the soil, insects and life along the chain. Wildlife rescues are packed in like sardines this year, so the little creatures need all the help they can get.
