What can I do with overgrown courgettes?

Just found these two hiding under the leaves - any ideas as DC can only take a few small discs fried up at any one time
seems a shame to waste them

@lifeisgoodrightnow this is a great suggestion. You can do the same with marrow - my mum used to make the best marrow moussaka. Overgrown courgette is similar to marrow. It can be a bit bitter though so good idea to fry a slice and test it.

I like them thinly sliced with a veg peeler
and made into a salad with a lemony dressing with mint.
