What’s for dinner?

Finishing work in an hour and will pop into supermarket on way home for dinner and wine…only problem is I have no idea what I fancy. What are you all having on this sunny Friday night?

Mexican wraps.
Refried beans with some fajita seasoning, quick pickled red onions or red cabbage, sour cream, cheese, avo slices, coriander, squeeze of lime... nice

Sausage, new potato and veg (pepper, aubergine, courgette, carrot and tomatoes) tray bake

Back from holiday so a bung it all in one tray is doing it for me tonight. Just the ten minutes chopping veg but you can buy it pre chopped I'd imagine.

Almost exactly what we are having, but serving with green beans.! We have grown our tomatoes so they are really sweet. We are having a garlic flatbread with cheese. It's one of our favourite dishes. Enjoy.

Chicken shawarma rice bowl. You can do various ones depending what flavours you like - I cheat by buying the Mediterranean microwave rice. I make up my own spice mix but you can buy packets I think which makes it even easier. Serve the air fried sliced chicken on top of some rice with some chopped salad and a dollop of yoghurt dressing.

Chicken Rogan josh, with egg fried rice because I sent my son to Asda, to get him out driving on his own (just passed his test and confidence building independent driving) ..he doesn't eat curry or rice so brought me an Uncle Ben's egg fried rice pouch 😅 my shopping list should have been more specific 😁

Not sure… was going to do home made southern fried chicken burgers and still might. But also might use the chicken thigh fillets to do chicken tikka skewers and have with flat breads and salad.

If you mix the zest of a lemon into some cream, it's lovely with linguine, prawns, (and scallops if you've got cash to burn...) cherry tomatoes. Maybe some chives and/or rocket stirred in at the end...

We just polished off nachos, beef chilli (found in bottom of freezer this morning, so) grated cheese, guacamole, sour cream. Ice cold beers. 🇲🇽 love Mexican food. 😋

It’s not a recipe as such, just something I throw together! I tend to use fresh linguini but you could use dried or spaghetti.
Cook the linguini
Whilst that’s cooking, halve cherry tomatoes and get them started in a pan with a drizzle of olive oil. After a couple of minutes add about three cloves of garlic and chopped red chilli (adjust to taste) and allow to cook off. Then add your prawn and cook until pink. Season well with plenty of black pepper, a good squeeze of lemon juice and plenty of black chopped parsley. It’s super quick, simple and tasty. Also works really well with crab.

Borin, but jacket potato with cheese and beans because I couldn't really be bothered to cook, it's healthy and I knew the kids would eat it. Followed by the apple and blackberry crumble my DD insisted we made this afternoon.

Nothing. The calories suggested for adults are a total myth as we are no longer spending the day engaged in hard, physical activity.

This is the only home cooked curry I've made that actually feels like a takeaway (which sometimes just hits the spot). I like frozen paratha or chapati from Indian supermarkets but didn't have any so served with garlic and coriander naan from Sainsbury's. I almost always skip the rice in favour of more bread.

Top tip: if you don't have a blender buy passata or you'll fail at the first hurdle!
