Do you consider yourself to have a healthy diet?

If so, what are your favourite and relatively quick breakfasts and lunches? I am fine with evening meals but I really struggle with easily prepared healthy breakfast and lunch ideas. I don't like oats and I'm so sick of greek yoghurt. Thank you?

I don’t eat breakfast but lunches are things like bean and feta salads, roasted veg cous cous, fattoush, tuna mayo and cucumber.
i tend to make something on a monday that will do me a couple of lunches and then again on a Wednesday.

you probably won't like my breakfasts then which tend to rotate between overnight oats, porridge (in winter), overnight weetabix and greek yogurt with fruit and protein granola 😅 if i'm WFH i sometimes have eggs on toast or make pancakes.
Work lunches tend to be homemade soups with a roll and some protein, salads or reheated portion from dinner the night before. Or eggs!

My lunch every day for the last week has been diced watermelon, diced cucumber, diced feta, chopped mint, lime juice, with a pitta and some hummus.

OP this is so like me… i work full time and only get 30 mins for lunch and don’t have bags of money but a year ago i decided to sort out my healthy diet so this is what i do and have stuck to for a year now …

Breakfast
I got so sick of Greek yoghurt too but it’s so good for getting the protein so I was a bit flummoxed until I read a great tip on here of mixing milk into the yoghurt so it’s much more liquidy, so I do that now and have it with sugar and oats free granola (I make my own if I cba or buy it from Sainsbury’s).

Lunch is always salad + protein (egg, cheese, hummus, mackerel, turkey on rotation) in summer and homemade soups in winter. I always add lentils to the soup for protein, regardless of the recipe! I make mon - weds lunches on a Sunday night and Thurs & Fri lunches on a Wednesday night.

Finally, I always always take a peanut butter and banana sandwich made with one slice of homemade wholemeal bread to have with a cup of tea mid afternoon. This is my best tip as it means you’re not starving at dinner time and it’s the only carb of the day!

What does healthy mean to you?

For some it means wholemeal grains, protein, vegetables, low fat. Others mean low calories, some mean vegan, others say no carb.

Balanced I suppose. I do eat meat, but try to limit it, and I am mindful of my calorie intake.

When I’m working from home, breakfast is often a grated apple and ditto carrot, with dressing - or broccoli and cherry tomatoes. It starts me off feeling healthy.

I find it tricky buying healthy salads.

One thing that’s cheap and keeps very well in the fridge, is white cabbage. Some of that adds a nice crispy crunch to any salad.

I like high protein wraps usually with chicken breast / tuna / peppers / or even better if there’s leftover chicken curry or fajitas. I’m also looking for healthier more varied ideas. Cold rice noodle salad is another with tofu / prawns and nice homemade dressing

Carrots are also very cheap and can be combined with cabbage to make a slaw that can have mayonnaise, lime juice, spices etc added.

Pulses are also cheap and healthy. I soak my own chick peas and cook them in the slow cooker because I'm too tight to pay for Bold Beans and will make some into hummus and roast some with spices and make a salad with ready made falafels (which you could make yourself if you wanted to). I'll have that with a pitta and carrot/cabbage salad, maybe a bit of pickled veg and some lettuce, cucumber too. You can make a few days at a time.

I make a lot of " raitas" in this weather. They are Indian yoghurt dips with cucumber, carrot or beetroot. V healthy. Many recipes online. To be eaten with rice, but you can eat them with pita bread or flatbreads too.

I usually have porridge with either flaxseed or chia seeds, blueberries and manuka honey. For years I was really thrown by breakfast and made some unhealthy choices or just choices that didn’t fill me like a slice of toast. Committing to a proper breakfast with healthy seeds, fruit and oats really gets me off to a good start and I’d really reccomend it.

Make my own breakfast bars using almond flour, dates (chopped up), oat bran, mixed seeds, mixed chopped nuts, vanilla essence (or almond), extra virgin olive oil, water. Might add dark chocolate on top or cocoa powder in the mix. Sometimes for winter I do almond and oat with sultanas and cinnamon.
Mix altogether in a bowl, then portion out into cookie shapes and bake in medium oven for 15 mins (do this after using the oven for Sunday dinner). That’s my breakfast bars for the week and all the protein keeps me going for 4-5 hrs before I eat lunch.

A treat at the weekend may be peanut butter on wholemeal sourdough with serving of raspberries or other fruit on the side.

Lunches - make own rye/spelt wholemeal flatbreads and have mix of hummus and veg to dip, or use flatbreads as wraps for different fillings. But usually it’s leftovers from night before. I cook from scratch most days.

I do because of major digestive issues.

Breakfast I’ll make a smoothie and have wholemeal toast (I make bread in breadmaker) w peanut butter. If I don’t make a smoothie I’ll have no/sugar muesli/spelt flakes w a banana.
i don’t like savoury breakfasts.

Lunch: Eggs of choice w avocado, sometimes smoked salmon, veggies. Or I’ll make a tuna melt , or salad. Or leftovers (make more of dinner!). Pasta and homemade sauce too.

Veg and lentil soup is good in the winter.

Breakfast I have scrambled eggs every day. Sometimes plain, sometimes with grated cheese. Or I add salsa, chopped coriander or avocado.

Lunch I really like making a bowl of tuna Mayo with added chopped red onion, coriander, finely chopped gherkins, a bit of mustard and I scoop it all up with a bag of crisps.

Tuna and beans is a good combo and full of protein and fibre. Use tuna in olive oil and you've got the start of a dressing. Add beans or chick peas, capers, gherkins, chopped onions, salad, herbs, salt, pepper and lemon juice. Eat as is or with a pitta.
