Easy traybake meals

We're in a rut for quick teas on school and worknights.
What are people having that's either in a traybake or slow cooker please? I need inspiration.

I picked it up at the supermarket without knowing the author or anything about it, and everything I've made from it has been an absolute winner with the kids. There's a whole section of quick traybakes for weeknights.

The other absolute classic is Diana Henry's book From the oven to the table, which are less quick family weeknight dinner, a little bit "foodier" https://www.nigella.com/cookbook-corner/from-the-oven-to-the-table-by-diana-henry

You'll get a lot of people recommending the Roasting Tin cookbooks but I've never got on with her recipes personally - never turns out quite right for me for some reason (same for Hugh F-W recipes, they never quite work right). But those John Gregory Smith ones all work.

I'm a bit 'whatever's in the fridge' with my tray bake dinners.

So lardons or chorizo, tin of tomatoes, onion, garlic, then maybe laid with some white fish, halloumi or chicken, some cannelini beans or lentils, maybe a layer at the bottom of some finely sliced potatoes.

Or super easy is the Boursin pasta dish that went viral - onions and cherry toms in the oven, boil up some pasta, then once tomatoes have started to breakdown, pop a round of boursin in the middle, back in oven, then stir it all through with your cooked pasta and serve.

The Quick Roasting Tin has a lot of good ones. My kids love the lamb meatballs with cauliflower (even the cauli-haters), we like the prawn curry, gnocchi, chilli peanut beef.

Ready-made puff pastry also a good base for quick tarts etc.
