Please give me your best pasta recipes. Bored of boring bolognese etc

i recently had a delicious pasta badged as “roast veg rigatoni “ at a restaurant and it was so so delicious. Rich, salty, herby. Just marvellous but my pasta attempts always feel lacking. What’s the secret of restaurant pasta (meat free for me) and has anyone got any recipes they make and recommend ? I’ve mastered a good tomato and basil but craving more interesting ones. I love all veg, artichokes, capers but need rock solid tried and tested ! Thank you. Hopefully this is a nice friendly Saturday thread that’ll give me something to cook later

Fry off some chopped up chorizo, set to the side. Use the chorizo oil to cook some diced chicken in the same pan. Once almost cooked, add the chorizo back in. Add a generous serving of white wine and cook off the alcohol. Add some cream and simmer away. Once chicken fully cooked and sauce is thickened, add some tagliatelle or spaghetti (or any other type of pasta you prefer) give it a good mix and serve. So simple, 5 ingredients, blumming delicious!

If you do want to try the vodka pasta but have it taste of vodka then google how to do it, it tells you what to do. If you cook it as per normal vodka pasta recite you won’t taste the vodka. Some people don’t like it tasting of vodka anyway.
