What's for dinner- the vegetarian version

Tonight I am having a mixed salad made up of

  • baby spinach
  • green lentils
  • radishes
  • cucumber
  • cherry tomatos
  • peppers
  • baked cubed sweet potato
  • possibly marinated tofu chunks if I can be bothered
  • spring onions
  • finely diced mint

I guess what is fancily called a Buddha bowl when you are paying £15 for it somewhere!

@WeAreNotOutnumbered have you tried the beetroot and black bean burger recipe from Las Iguanas? It's soooo good and very simple.

we are having pizza tonight - normally a weekend thing but we went on a pizza making master class a couple of weeks ago and my husband is trying to perfect his dough, so has asked to practice tonight 🎉 yes please!!!
probably a simple margarita.

Tonight is orak arik - it’s sautéed cabbage and carrots with scrambled eggs, which sounds horrible but really works. It’s Indonesian I think. I usually add a bit of garlic powder and pepper as it sautées then once they’re soft add in the eggs.

We were staying in a villa on crete and we were going to have dinner at home. So I was browsing the cretan cookbook that was there and found that recipe, gave it a go and now we have it fairly often.

I gave my mil the recipe and she doesn't like aubergine so she tried it with courgette and said it worked really well. I havent tried it with courgette because there might be a mutiny if I skip the aubergines! However, I dont think they'd mind the addition of beans in the sauce so I might add some next time.

Gotta love sharing recipes and the tweaks that come with it!

I did vegan cheeseburgers again using the Aldi no-beef burger and violife vegan cheese. It was SO goo the first time around that both Dcs asked for t again (knowing it was vegan) and DH who has been away and just back and is a long time vegetarian but does not like burgers very much asked to try it.

I had gone out for lunch (vegan chilli and rice) and so did not eat anything. The cheeseburgers went down very well indeed. I added chilli gkerkins to DH's.

We were out last night and I had butternut squash risotto with goats cheese It was quite okay.

I think out again tonight (have guests) so we will see. If we stay in I have courgettes that need eating so might do a simple baked courgettes with olive oil, herbs and lemon and throw a can of butterbeans in and have with nice bread.

have decided that Fridays are going to be ready meal Type oven foods - burgers chips etc, because by Friday, I'm done and have zero desire to cook, Saturday my husband makes pizza so I don't have to think about that, and then Sundays I will make a big vat of Daal that can do for dinner live in the fridge in the week for giant teenage boy "snacks"
anyone else have a "rota" of meals they do in the week to help cut down mental load?

Yes!

I tend to do a cooking session on a sunday to get ahead for the week.

Mondays are usually veggie chilli (can be made into a traditional chilli with rice or tacos or burritos) or a bolognese.

Tuesday is a rotation of marry me chickpeas (or other protein/veg), katsu sauce with noodles, tofu and veg or a mushroom stroganoff (if we've had rice on Monday stroganoff is usally out)

Wednesday is a salad based meal. So I might do halloumi, salad and serve with wraps. Or quiche and salad. Or something (maybe omelette)

Thursday is usually a freezer meal. Egg and chips. Or burgers.

Friday we always have my sister and her family around so me and her take turns in the thinking and prepping. But usually a curry or a lasagne or the Greek aubergines type thing. Something hearty that feeds a crowd.

Saturday I make kebabs. I'll either use fake chicken pieces or paneer or dehydrated soya chunks and marinade. Cooking a hot oven and serve with flatbreads. I might make a homemade slaw to go with.

Sunday I do veggie brunch. Could be brioche eggs bread and fruit. A full english. Veggie breakfast wraps. Sausage sarnies. Then in the evening something simple.

There's enough familiarity that the thinking is dealt with but enough variation that you can go for a few weeks and not have the same meals/combos.

Every now and again in get bired and make something new. This week I am making a mujadara for example.

Today i am going multi-course as I am WFH.

Grated carrot and lentil salad with pomegranate seeds
Cheese crepes with caprese salad
chocolate and vanilla cake and strawberries

Oh yum. My secret vice. Our chippy does battered mushrooms (and battered brussel sprouts in winter). Both are VERY much worth it!

My dd is a vegetarian & I had a bit of time yesterday & didn't want her having her usual vegetarian processed stuff. So I made her chickpea fritters & she loved them!

Mutter paneer and rice! Considered cooking pasta but it’s a bit chilly today and I fancied something richer. Lazy version with sauce from a pouch, not made from scratch (I can cook it from scratch but DS has a gymnastics club tonight so we’ll be home late, and I need to make tea and get him into the bath quickly).

Probably have tomato and olive pasta or soy chilli from scratch tomorrow.
