Best coffee cake recipes?

I want to make a coffee cake like one I used to get in my local cafe.
I've tried several versions and I'm not getting it.

I want it light rather than rich but still moist, with a good coffee kick.

I want a thick fudgey type icing. Not runny but big wedges of coffee fudge.

Does anyone successfully make a cake like this?

Victoria sandwich mix with camps coffee essence. Then use the camps coffee essence to make whichever type of icing you wish.

I did one with crushed walnuts. It made it dry I think.

I don't want walnuts I want coffee and fudge.

I'll look at mary Berry tray bake.

Camps coffee gives better coffee flavour than espresso?

What icing though? I tried cream cheese with coffee and it just went runny rather than fudgey.

I swear by Camp. Icing is icing sugar, cream cheese and camp.

Not enough sugar and too much camp maybe? Stick it in the fridge once mixed to chill before you splodge it on the cake?

following as it’s my son’s 18th birthday next week and he’s requested coffee cake 😊

I like the idea of using camp’s coffee essence, I’ve not heard of using it in this way before.

There is a ganache type icing that’s more like fudge and you cook the ingredients . I’m not sure if it’s a proper ganache as it’s in a really old McDougalls book.
I often do an old fashioned butter cream

I really rate Delia Smith’s recipe. The one online is apparently “modernised” but her original used camp coffee! I’m sure you could track it down:

I’ve got a recipe which is essentially a sponge cake made with camp coffee and then filled with a coffee buttercream which also has eggs in it. Its yum and very rich.

There is a knack to non runny Cream Cheese icing. They type of cheese (full fat important) AND the order of the ingredients. Google it...but think you have to mix butter/sugar first otherwise the liquid of the cheese dissolves the sugar =runny

Found it a game changer with DD's favourite carrot cake.

Delia's recipe has a mascarpone icing.

I think I'm going to have to try a few different icings to find what I want.

But deffo ging to get Camp coffee. Where do I find it in the supermarket? baking or coffee/ tea isle?

I knew I couldn't be alone in this and there must be something I just didn't know!! I'll google.

I didn't use butter, only sugar and cream cheese. And yes it was as if the sugar dissolved the cheese!

I looove home made coffee cake but don’t use camp coffee, isn’t it made with chicory?
I make up diluted very strong instant coffee or percolated coffee in a small bowl. Just enough hot water to dissolve if using instant coffee.

Make a Victoria sandwich cake gradually adding some of the coffee mix with the flour so it doesn’t curdle. Use more of the coffee mix to make a butter icing filling (softened unsalted butter and double the amount of icing sugar (2:4oz). Make an icing topping with the remaining icing and coffee and top with walnuts if you like them, or drizzle melted chocolate if you like a mocha flavour.
I like it quite strong coffee flavour so make it quite dark, as there’s a fair amount of sugar in a Victoria Sandwich and I don’t like sweet cakes.

Oh, I make a stupidly strong cup of freeze dried decaf coffee up a couple of hours ahead. Honestly, spoons and spoons of the stuff. A good 3-4 dessertspoon of granules to 150ml of water (hot but not boiling).
Stir it/shake it a lot to try and de-lump as much as possible. Then you have a strong enough "coffee" to stand the cake batter dilution. I keep decaff in the cupboard just for this purpose.
