Meal ideas with just an air fryer and kettle

Due to building work we are going to be without a kitchen for 2 weeks

we have an air fryer and kettle

does anyone have any fairly healthy but genius meal ideas to get us through?

has anyone just used boiling water & fresh pasta and found it cooked without being on the heat?

Kettle - super noodles, cup-a-soup?

Air fryer - anything you can make in the oven.

Are you able to buy/borrow a microwave and a slow cooker? You can cover most things then.

We've just had our kitchen done and bought a portable hot plate for 15 quid. Amazing!

For air fryers meals anything oven based really but some of our favourites included:
Chicken wraps with salad and chips
Jacket potatoes and beans and cheese
Burgers
Salmon and new potatoes
sausages, micro mash, and vegetables

You can roast a small chicken in an airfryer with new potatoes round the edge and carrots. Have you a microwave for veg?

Possoble, lots of salads and sandwiches.
Noodles or fresh pasta will 'cook' if you stand them in boiled water.

If you had a microwave or slow cooker you could batch cook all kinds of dinners (stew / curry / tagine/ dahl/ chilli) to freeze and just heat up while the work is going on.

I agree with getting a portable hob. An induction one from IKEA (£50?) will probably convert you to induction and you can always sell it on for a good price.
Cous cous can be made with just boiled water and left to stand before you fluff it up.

Have you got a microwave? Slow cooker? Rice cooker? When my kitchen was replaced I cooked ahead multiple meals, frozen them and microwaved them. I also made slow cooker curries (you can make baked curries do casseroles) with microwave rice or I have a rice cooker.

A camping gas stove? We always had one for emergencies when the electric goes off. (Live rurally)
If the weather’s good where you are, a barbecue for a couple of meals?
Otherwise lots of salads and fresh fruit.

I just bought a 2 ring portable induction hob because ours broke and will take a while to be replaced.
The one I bought is amazing! Might just keep using it!

Roast veg in Rose Harissa, sprinkled with feta and walnuts. A homemade Tzatsiki type thing on the side

Jacket potato in air fryer with tuna mayo
potato wedges - sweet potato even better!
chicken skewers
tinned veg stood in boiled water to warm through with something else
you can even do bacon, mushrooms etc in air fryer
skinny noodles made from cauliflower are always a quick option to use boiled water with too
most oven foods do in the air fryer

I've been without an oven for about 18 months and had to use an air fryer and the hob to do my cooking. To be fair, most things you can do in an air fryer and/or microwave but I disagree with the statement that 'anything which can go in an oven can go in the air fryer'. Pizza, for one. Lasagne in an air fryer wouldn't heat through properly, neither would a pie. If you have chopped up food spread evenly through the fryer then that would be fine. I cook allsorts in mine - salmon and mediteranean veg, steaks, bacon, sausages, breaded/battered chicken or fish, meatballs, roast chicken, chicken kievs, chips etc. picking up a slow cooker might help if you don't already have one. I'm sure you'll manage, enjoy your new kitchen

We do pizzas, pies etc in an air fryer all the time. Chop up the pizza and do it in quarters - takes a couple of minutes for each one so no big deal, pies etc just need a bit of care eg turning over so cooked evenly.

Those sachets of flavoured couscous just need boiling water and are a really decent thing for a quick meal. That with some salmon or chicken and salad would be great and healthy.

Chicken, onion and peppers cut into chunks, bit of seasoning on them, spray with oil do in air fryer. Meanwhile put cous cous in bowl, season as you want, cover with boiling water from kettle, put lid/plate over so it steams and fluffs up. Lovely meal. Can put quarter tomatoes in air fry too to make the chicken more moist.

I haven’t used my oven since I got an air fryer. Rarely use the rings on my cooker since getting an instant pot.

Thanks for the ideas so far, it’s only two weeks so don’t want to buy any other appliances that we won’t need after

we do have a slow cooker but I usually brown meat before adding to the slow cooker, but will have a look at some recipes

You can do couscous just by pouring boiling water over it. Roasted Mediterranean vegetables, feta, couscous, and then a harissa dressing would all be doable with that kit.

You could also buy some tinned ratatouille (genuinely perfectly edible, the stuff by D'aucy is the best I have found) and do baked potatoes (and possibly sausages) in the air fryer to have with it.

I might be pretty tempted to do salmon en papillote as well, as you can do that nicely with vegetables in with it. And then either do some baby roasted potatoes if the air fryer has two sections or eat it with bread and butter.

Roast a chicken in the air fryer and eat with salad and bread and butter.

Do a panzenella (sp) salad where you roast butternut squash, red peppers, red onions and tomatoes and then eat that with feta, leaves, a lemon/mustard type dressing and some croutons plus bread and butter if you want.

Roast butternut squash with cumin and chilli, then serve with prosciutto, parmesan, crunchy nuts and seeds and drizzle balsamic over the top.
