How likely would you be to fall asleep

At work. If you had nothing to do, a fan on (white noise) and nobody else in work with you and you had about 5hrs sleep the night before?

i am trying to judge if my current tired/sleepiness level is normal! I do have an under active thyroid but it is medicated

Have you had your bloods done recently? Thyroid medication can be a git to get right then the body keeps moving the goalposts. Stupid bodies!

Yes bizarrely the best they’ve ever been! I’ve got hashimotos
TSH was 1.2
ferritin decent but my iron saturation still low
vitamin d up to 76 (it was 9 in 2020)

Hi.
I also have an underactive thyroid, and before I retired, my biggest fear was having to attend meetings in large groups.
Most of what was up for discussion, bore no relation to my role at work, so sitting in a warm room, tired from lack of sleep, and the “white noise” effect droning on.
I used to have to dig my fingernails into my hand (surreptitiously), just to stop myself nodding off.
Even tho it’s understandable, the shame of emitting even a gentle snore would be too much to bear.

Have you ever looked into getting some iodine into your diet, also maybe get your iron levels tested, and look up which foods are rich in iron, if it shows up as deficient.

Then there’s the constantly feeling temperature changes too, I’m either freezing on what others might call a pleasant day, then at other times, I get a very sudden feeling of being too hot, and I can get very upset if I can’t remove my jumper fast enough.

Dont underestimate how a thyroid condition can effect your life.
Take care

I'd be unlikely to sleep.

However, a colleague did have a habit of dozing off at his desk, and ended up being diagnosed with sleep apnoea. He got a CPAP machine and got fitter and sleep problems greatly diminished

Never. No way.

Not a chance. Plus five hours isn’t that bad. It would have to be a week of five hour nights to make me feel really tired and still I’m too wired at work.
