Ideas needed for a gluten-free vegetarian meal without chilli this weekend pls

I'm cooking for someone at the weekend and need inspo for something gluten free (coeliac), vegetarian and not spicy (specifically chilli). All requirements for one person so I can't mix and match! Another guest is allergic to nuts so ideally I'd prefer not to include them too. In the past I've done roast cauliflower, butternut squash gratin, a rice salad thing and a roast veg tart with gluten free pastry but I'm out of ideas.

Also, she cooks a lot of risotto herself, so would prefer not to do that.

Id get a gluten free main and gravy granules and do some roast veg. Or gluten free pasta and make a pasta sauce. There's loads of GF options these days in every supermarket.

I could but it's always a bit shit for her eating anywhere but her own kitchen so I try to make a bit of effort.

Dauphinoise potatoes/ gratain , a lovely fresh green leaf salad and separately fresh tomato salad. Simple and different.
You could layer the potatoes with spinach & mushrooms if you prefer.

I cook GF as coeliac husband and MIL who is veggie too. The bbc vegetarian lasagna with GF sheets turns out really well (soak sheets in hot water first to avoid hard lasagna!) as does a lentil bolognaise with homemade garlic flatbreads (just yoghurt and gf flour) also halloumi dishes.

There will be dauphinoise potatoes anyway but I always feel it's a bit underwhelming to just serve those with veg/salad. Maybe that's the glutton in me. And I need to find coeliac friendly lentils. I've looked in three supermarkets and none of the lentils they stock (tinned or dried) are certified gluten free due to possible cross contamination.

If you’re doing dauphinois and side veg anyway, how about gf veggie sausages with a red wine sauce? Seems a lot to have to cook a completely separate meal when you’re obviously going to a lot of effort already.

Ive done a delicious quiche with a hash brown base rather than pastry. You just mix with a load of butter and seasonings and then smush them into the pan and bake until they are slightly crispy, then add the egg mix and cook as normal.

serve with a lovely green salad and maybe a coleslaw type salad, bean salad and/or Waldorf

Beetroot and feta tart? You can make mini ones to look fancier. Virtually all type pastry can be bought gluten free in frozen section

Marry me tofu / chick peas / sweet potatoes- it says chilli but you don’t have to add it.
Serve with roasties and green vegetables

This is delicious and easy to make in the slow cooker, cook for way longer than the recipe says, until the lentils are really creamy. It is tasty without being at all spicy. I prefer it with homemade flat bread which I'm sure you can make gf. I usually miss out the paneer or substitute halloumi.

I think sometimes people try to play it a bit too safe with vegetarian options and just base it around carbs and veg. I love a protein-rich main dish, personally

This brand some up as not having a 'may contain' warning and several coeliac pages suggest washing lentils. Maybe ask your friend if there is a brand she considers 'safe'

Veggie moussaka was a favourite here. Basically ratatouille layered with aubergines mix yoghurt with a whole egg for the topping. Serve with salad
