Is it safe to refrigerate slow cooker chicken curry overnight and reheat?

I know the answer to my question but I always stress about re-heating chicken and want a second opinion:

This morning I put chicken etc into my slow cooker, to make a curry for tonight. Then we got an impromptu invitation to join friends for Sunday lunch, so we’ll have the curry tomorrow instead.

So once the cooking time is finished, I’ll let the curry cool, I’ll refrigerate it over night, then I will reheat it tomorrow night. The chicken has not been frozen/de-frosted.

Please can someone tell me this is fine?

Of course it is. We often have meals two nights in a row because it's easier to cook double the amount and then re=heat the rest the next day.

Yes. If you want to be extra safe, you would want to cool it quickly after turning off the slow cooker, so it spends as little time as possible in the "danger zone" but practically it's difficult to cool the contents of a slow cooker quickly and I think it's fine to let it come to room temperature first before you chill or freeze it in portions.

I think what I would be concerned about in this scenario is how do you cool the curry down before refrigerating it?
I would have transferred the curry into a large metal pot and submerged half the pot in a sink-full of cold water, stirring it gently once and a while to help it cool quicker, even changing the water if necessary, and when it was cool enough I would refrigerate it and there would be no problem keeping it, or reheating it.

Yes fine. Restaurant rules are:

  • cook once, to 75°
  • cool (on counter is fine)
  • refrigerate for up to 72 hours
  • reheat to 82°
  • eat
