boring - out of date Mediterranean vegetables

I've got some co-op Mediterranean veg in the fridge, and it's dated the 10 February. Is it ok to eat still? TIA

I would eat it , is it in a tray for the oven ? Just feel it and if they feel firm still it will be ok.

Does it have courgette in? If not, go for it. If so, test how firm it is. I've had similar packs and while I doubt it'll make you ill, the courgette taste absolutely rank if it's gone soft.

I sliced my own bunch of peppers, courgettes, carrots, aubergines etc to cook, I think, last Saturday, but never got round to actually cooking them. They’ve been sat in my fridge now in a ziplock bag and I have actually just put them in and they’re fine, so I’d assume the packs are as well. I think if any of the pepper or anything are a bit slimy then no, but 2 days they definitely should be ok. I’m terrible for remembering to cook stuff by the bb or ub dates, and veg out of date are far safer than dairy/poultry etc. chuck ‘em in and enjoy. As I shall be doing when mine are ready. Also, in future, if you’re not going to eat something like that within decent time frame then it’s a good idea to cook them and then put them in a jar and cover with olive oil and put in the fridge until you’re ready to reheat and have them. I do this all the time when I make my own. They last for ages that way.

Just look at it for goodness sake. If it looks fine, then it is fine.

With Mediterranean veg I always go by the courgette. Peppers an onions will be fine 2 days past the labelled date. As long as the courgette wasn’t soggy then I’d eat it. I do also smell the veg if it’s in a ready to cook tray or a plastic tray with oil because sometimes that stinks if it’s too far past best

Are we talking raw, uncooked veg? If yes, surely it’s easy to see whether you should be eating it or not.

I just roasted up a slightly soft, not too soft, courgette, its nice

There were a few brown bits on it, I just cut those off and the stalk nubbin had a bit of mould on it, again just cut that off.

You could either roast it all up and eat it as is, or blend into a roasted veg sauce and freeze it in portions.

Thanks all, I'll take a look at the courgette - it is raw veg but coated in oil/green bits, so it's hard to tell.

Well just have a sniff, see if theres any mould, give bits a squeeze.

I dont throw any food away really

If it’s already chopped up and marinated then it’ll be less long lasting than whole veg. I would check carefully for any squishy looking bits and cut them out. Red pepper can go grim surprisingly quickly.
