Super easy veg dinner party ideas - help!

Am having six people round for dinner tomorrow and have totally failed to prepare. Im out most of tomorrow so won’t have that much time to prepare. Any thoughts on something I can throw together quite easily that will feel like a decent dinner? There will be two vegetarians and one person who can’t eat nuts. I’d be v grateful for any suggestions!!

-Shakshuka served with crusty bread. I add a tin of chickpeas for extra fibre/protein.
-Fajitas and everyone helps themselves. Peppers/onions fried in the fajita or taco mix. Remove enough for the 2 veggies then add some slices of chicken for the meat eaters. Savoury rice. Sour cream, lettuce, tomatoes, jalepenos, grated cheese. Wraps.

I'll caveat that I'm not veggie, but you'd need to check if the cheese has rennet and check for any nuts in the packet mixes.

Nice veggie lasagne from Cook. Easy to just pop in oven with garlic bread and side salad.

Tagine of Sweet Potato, chickpea, and peaches. Really simple to throw together and leave simmering along. With easy Ainsley Couscous.

Or courgette, leek, and Parmesan risotto with white wine. Again, a one pot dish that’s easy to chuck in a pan but maybe needs more regular attention.

well I can see it's more down to earth but I was taking into account that the Op doesn't have much time and possibly energy
I've done many dinner parties over time, some exotic and others not so. We have vegetarian and also meat eaters in our extended family so I often cook for a mixed bunch.
I have found that my suggestion is always a high runner. We always have a large salad with a lot of ingredients

Vege paella ( cooked in the oven so super easy) you will need a decent sized casserole dish/pan though.

Pasta bake with extra cheese on top, serve with tear and share garlic breads

Paratha stuffed with paneer and spicy lentils

1/2s of small roasted squash topped with a chilli cheese serve with sour cream. Chilli uses a base of frozen peppers, onions and tinned beans, passata garlic, chili powder.
Could use slices of squash depending whats in the shops.

Ratatouille/mixed bean stew and some boulanger potato/sweet potato? It's quite nice to use both types.

That followed by a few nice cheeses.

My sister served up two veggie lasagnes from COOK to guests recently. One roasted veg and one mushroom. She transferred them to her own dishes. Not cheap but they were very good apparently. You could make a fancy salad to go with.

Oh, some interesting ideas. I actually quite like the idea of a quiche! But the other ideas are good too … thabks.

Stir fry with quorn or edamene beans. Add garlic, ginger, soy sauce and honey. Rice or noodles can be added.

Penne Arrabbiata (super simple and quick and delicious), salad and garlic bread. Then buy a good tiramisu and decant it into individual dishes before the guest arrive or a fruit sorbet or fruit salad for the vegetarians x

veggie dinner - I would go with either (a) ratatouille served with some kind of starch eg potatoes or bread (b) a nice veggie pasta or risotto eg mushroom or squash (c) veggie lasagna, or (d) a Mexican style thing with guacamole, nachos, veggie fajitas

In addition to my suggestions up thread, if you need a quick dessert. These are ideally made a day or 2 beforehand and left in the fridge, so maybe too late for this meal:

Buy a pre baked, sweet pastry shell- it can be used for a multitude!
-Salted caramel tart. Empty a tin of nestle caramel into the case and spread it out, sprinkle over some salt. Melt some chocolate and apply a thin layer on the top. Too thick and its difficult to cut.
-Chocolate tart served with berries/cream https://www.jamieoliver.com/recipes/chocolate/simple-chocolate-tart/
-Passionfruit tart. 1 can condensed milk, pulp of 3 passionfruits or a little tin, squeeze of lemon juice. Mix and pour into pastry case. Bake on a low heat till just set and still slightly jiggly in the centre. It can burn quickly, so keep an eye on it. Leave to cool. 😋
