Single portion meals to heat up

An elderly relative of mine has recently been in hospital and struggling to cook for themselves. They really don’t like eating frozen food or ready meals… what can I make them that is easy for them to re-heat. Lasagne was a winner recently and a bonus that I could assemble one big one for my kids and a little one for the relative.

I'm single and a fan of The Batch Lady and Taming Twins both of whom market themselves as family cooking. But the key to having home cooked evening meals as a busy single person is simply being able to freeze a dish and they are both good for this.

Edit: I know you said frozen but I interpreted that as UPF freezer food!

Pies in general are always a hit - either with a pastry top (cheese, meat etc) or with mash (cottage, shepherds, fish etc). Add a little bag of steamer veg if they have a microwave.

Thank you! They are very against frozen food - even home cooked stuff!! But I can take the batch cooking advice for my own family and provide them with a couple of single portions meals for their fridge weekly. They have other family and neighbours dropping food round so I don’t need to deal with every meal.

Im not in the UK so my brands are likely different and although these are expensive https://www.robertdyas.co.uk/cook-heat-03l-round, it gives you an idea.

I have a number of dishes like this that I can cook and freeze for my dad (he’s hours away). If ever I make a casserole, shepherd’s pie or some such, I can just use these. They freeze, microwave and wash easily.

Stews, shepherd’s or cottage pie, fish in white sauce with greens will all go well. Note that he won’t now eat what he used to. My dad’s appetite has declined over the years. What was once one evening meal now does three nights.

i often cook for just myself but usually make at least 2 portions and reheat in the microwave. i reheat all sorts!
pasta & sauce
curry or chilli & rice
roasted veg tray bake with chicken or sausages
sunday roast
risotto
homemade soups
things like lasagne, cottage pie and pastry pies i find do between in the airfryer than the microwave
