Inspiration for what to make for lunch for friends

We have friends coming on Sunday and I can’t for the life of me think what to cook for lunch. Adults plus 3 primary age DC. Kids would probably prefer burgers and chips!!!
I think I’m so done with Christmas catering my brain is blank. Ideas please, nothing.too complex.

  • Chilli with rice/jacket spuds
  • Fajitas
  • Roasted ham or chicken with roast potatoes and a big bowl of salad plus fancy little side salads
  • Lasagne

You didn't say fancy dinner party type scenario so I went with minimal effort/self serve type dishes, keeping a relaxed atmosphere.

My usual solution to this is pasta, garlic bread and salad with chocolate cake fo pudding. If it's too cold for salad do a vegetable-heavy pasta sauce.

Mary Berry’s Express Lasagne with salad and garlic bread. Super easy to make and popular with our primary age children. Dessert? A trifle from You Know Who.

Tacos (the soft corn ones). People can help themselves to what they want to put in them. Some kind of slaw, breaded chicken, prawns/fish or a slow cooked pork with chipotle, garlic mayo (or similar crema), chilli sauce, I like a crumbled feta (most similar to the Mexican cheese I’ve found which is easily available). Nachos and guacamole (which can be put in the tacos too), some sliced carrot (only thing I’ve known kids to love universally).

Could you do pulled pork, coleslaw and rolls, possibly some sides like spicy sweet potato wedges and a tomato, feta & cucumber salad? You can cook a boneless shoulder joint in the slow cooker and just shred it and mix in some bbq sauce. Easy and filling and everyone can make their own plate up if you just lay it all out.

My go to Pittas -spicy chicken - home made or shop bought. Salad bits and yogurt mint dip. Minimum effort max taste.

As PP, might go to weekend lunch when we have people over is to get two chickens, pop half a lemon up their bottoms, add olive oil and salt. Then roast a couple of bags of baby new potatoes in olive oil, salt and rosemary. I normally serve that with a rocket salad and a tomato and basil salad then some sort of bought dessert. But in the winter, you could do something like tender stem broccoli with a herb butter and fine green beans. It’s pretty low effort for a very easy and tasty lunch.
