Help - buried alive under huge mound of sprouts, carrots and parsnips

Any ideas for recipes to use up left over Brussels sprouts, carrots and parsnips?

Soup obviously or slice veg and freeze for later use.

You could grate carrots & put into portions then freeze. This can then be used in sauces such as bolognese, to bulk it out.

I believe some people do bubble & squeak with Brussel sprouts.

As in cooked leftover? Or uncooked leftover?

If uncooked then I would prepare and freeze whatever possible. I bought a lot of parsnips, potatoes and carrots when they were cheap before Christmas. The parsnips, potatoes and some of the carrots were prepared, half roasted and frozen. Some of the carrots were cut, blanched and frozen. The rest (the ones we didn't eat) were finely diced and frozen as mirepoix with some (not cheap) celery. I don't like sprouts much so I didn't buy many of those.

If cooked - again I would prepare and freeze if not eating it immediately. I would do a sort of bubble and squeak mash-up with all the veg plus some additional potato, onion, and bacon if I had any.
I would make a soup (but without the sprouts as I'm not keen and don't think they go in a soup... But obviously you put in whatever you like!). I would also make a vegetable curry with every vegetable I had to hand (except sprouts). I keep portions of vegetable curry in the freezer and add additional meat or fish when I reheat those.
And lastly - I would freeze portions of cooked veg to do something with later, if I had room in the freezer. I usually have a bag of mixed veg leftover scraps that I use for soup when I have some nice stock as well.

Carrot & coriander soup. I'd cut up and parboil the parsnips and then freeze, so they are ready to use next time.

As for sprouts - we like them, but I don't think they freeze all that well. No idea there. I expect there's some soup recipes out there.😂

Ive just made celery soup and put left over sprouts in it and it was lovely! I also added some Stilton.

With carrots I would roast them with tomatoes and make soup. Or a pasta sauce. Good dose of betacarotene.

Parsnips...crisps? Or soup again...

Carrots and parsnips. Layer them up with newspaper in a crate/tray or box and keep them somewhere dry and cold like the garage or a shed. They will keep for months. As long as they aren't touching each other they'll be fine.

I would roast them with onions and garlic. And happily eat it for every meal for the next fortnight.

Parsnips and carrots finely chopped and in the freezer for beef stews later in the month. I'd shred that sprouts and stirfry with mushrooms bacon and noodles with ginger and garlic. You can also grate (or blitz in food processor) the carrots to add to bolognese or make carrot cake.
