Easy christmas desert to make

Traditionally we make a cheats tiramisu in advance although it can take up vital fridge space once assembled as it needs to chill and "firm up" at least one day before Xmas. Very simple. Mix 2 tubs of mascarpone with 3/4 of a tin of condensed milk. Layer with lady finger biscuits soaked in coffee and brandy or whisky. Dust with cocoa powder between cream layers and bosh there you go. Not in any way low calorie, but always a hit when we serve it.

Frozen berries (minimally defrosted) then pour hot, melted white chocolate over them and sprinkle with icing sugar.

Slice shop bought Madeira cake and put in a bowl. Defrost frozen forest fruit and put on top (maybe not all the juice). Get a pot of ready made custard and mascarpone cheese - beat together and put on top. Whip cream and put on top.

Only advice with this is don't over mix the mascarpone and condensed milk as it can go runny and then the sponge fingers will float and that is bad. A pack of sponge fingers and the above mentioned cream elements should fill a dish with 2 layers of sponge and 2 layers of cream about 25 x 20cm. Good luck!

This is delicious and almost too easy. I use chocolate digestives for the base. I don’t get involved with actual oranges, but instead get a tin of mandarin segments and use the juice to flavour the cheesecake and the segments to decorate. A bag of mini chocolate orange segments to decorate also works really well.
