Maris Piper potatoes - still the best for roasting ?

I've just done a test roast, partly because I'm out of practice and partly to see if my beef dripping is still usable. The dripping seems fine (not bad for two years in the fridge) and the potatoes roasted well. It was, however, an un-named baking potato from the supermarket. Would MPs be better still or any other variety than my un-named tester? Thankyou.

I use Maris Pipers, boil, bash about, salt, pepper and tiny sprinkle of cinnamon and into hot sunflower oil. Cyprus potatoes are the ultimate, if you can get them.

I've used smoked paprika with Parmentier potatoes but never cinnamon. Beecham's Powders taste of cinnamon!

I've had some shocking Maris Pipers lately! Par boiled and cooled, they start to develop black or brown bits which I have to cut off, so I was doing extra ones to cover that.
Best I've found are just ordinary white potatoes! So long as they're par boiled it shouldn't be a problem.

Cyprus potatoes for roasties?! You’re having a laugh! They are as hard as nails and only just good enough for a salad.

Are you saying your sainsbury's only sells one variety of potatoes? And that's baking potatoes (loose or bagged?).

My sainsbury's sells dozens. Lots of different varieties. As do all the other supermarkets locally.

Have you tried them roasted? If you boil them in the same way, the texture is great and the flavour is delicious.

A tiny, tiny sprinkle of cinnamon is great-adds warmth but doesn’t taste cinnamon-y. We do use cinnamon in a lot of our savoury dishes though…

I use King Edwards with sunflower oil , as dd is veggie, but tbh i think it's as good as animal fat.

I always look for Marfona. I prefer these to Maris
Piper but are usually only available in farm shops and greengrocers.

Is it full size supermarket? Even the "Locals" round here have half a dozen plus different varieries of potato.

So basically you have to use baking potatoes for baby salad potatoes, for roast potatoes, for mashed potatoes, for boiled potatoes? Because "baking potatoes" are only really suitable for doing jacket potatoes.

Maybe you're not mainland UK. It's most certainly a very, very unusual Sainsbury's.

Are you the person that suggested adding cinnamon to bouef Bourguignon?

I’ve tried lots of different potatoes for roasties - IME most potato varieties can make great roasties if parboiled, cooled and shuggled in a colander to ruffle them and then roasted in hot oil in a metal tin with enough space that they aren’t touching each other.

I think my views will be controversial…but hear me out. I bloody love roast potatoes and spent a year (not every day!) trying various different things to work out how to make the best ones. To me, the perfect roast potato is fluffy and soft on the inside (almost squishy), and very crispy on the outside with almost a shell of crunch.

My potato investigations suggested that the type of potato used, makes minimal difference. Any floury potato will do. Even those one that have no name and are just called “potatoes”. What does seem to make a big difference is that really fresh potatoes make worse tasting roast potatoes! They do not have enough give to make that softness they need inside, and they taste less potato-y. But the variety honestly made no difference.

That's really interesting. Sometimes my roast potatoes are extra tasty and I wonder if that's when the potatoes are older.

Of course they've got salad potatoes and they've got bags of 4 'baking' potatoes and they've got large bags of unnamed potatoes and loose unnamed potatoes, oh and sweet potatoes. I'm completely confused. They simultaneously only have baking potatoes and also all sorts of different varieties of potatoes, but you think you can only use the potatoes designed/packaged for jacket potatoes to make roast potatoes, not the white potatoes or any other variety of potatoes that are perfectly fine for roast potatoes. "Baking potatoes" are just larger potatoes selected for making baked (jacket) potatoes, and will be a range of different varieties. Of course, you can roast them if you want to, just as you can roast any other variety of potato, but they won't necessarily be the best variety for roasts.

P.S.The varities of the potatoes are listed on the bag in Sainsbury, so bagged potatoes won't be "unnamed". Even if they're sold as "White potatoes" they will have the specific variety printed on the bag.

I survived the vintage beef dripping. Just need to pick a potato for roasting. We're fortunate to have a choice of suitable spuds. I think I'll leave the cinnamon on the shelf though.

I buy potatoes by the sack from a local supplier. MP aren’t the best (I think Jamie Oliver is getting a bung). Above is mentioned Marfona and Wilja, both ok, but I prefer Markies. Look in Lidl, they have lesser known brands in their 5kg sacks.

I've bought more 'baking potatoes' for roasting, on the basis that they look exactly like the King Edwards that were more than twice the price. I won't have any leftovers as I only cater for myself but I shall ensure plenty!

Do you ever have leftover RPs or is that unheard of?

I use ambo potatoes. Great for chips and roasting. Buy sacks from a local trafer.

Albert Bartlett Roosters for us. Roasted in a mixture of veg oil and goose fat. Rosemary or sage sprinkled on them.
