Is this reasonably healthy

I've been eating badly for so long that I think I've lost perspective on what is healthy or not. I've started to cook more and did a slow cooker stew today that was delicious but I don't know whether it's healthy enough to have regularly?

It was basically chicken breast fillets, new potatoes, carrots, parsnips, onion, garlic with mange tout and celery thrown in near the end. I used a stick pot, various herbs and spices so it had a spicy kick and also added in a little bit of honey. At the end the stock was too runny so I thickened with gravy granules.

Obviously I know the chicken and veg elements are fine but is the Knorr stock pot too salty and there'll be a lot of salt in the gravy granules too. Anything else I can thicken the stock with?

Any other slow cooker recipes very welcome and I'd welcome thoughts on whether this is healthy enough to have regularly (maybe twice a week).

You could use cornflour to thicken the sauce.

It’s absolutely fine. Cornflour is a good shout to avoid gravy granules.

Yes cornflour, remove a few spoons of stock and mix to a paste before stirring in . You could also use soft cooked potato or thickening granules.

It’s homemade food with lots of veg, don’t overthink it. More of that. Add a tin of (not baked) beans if you want to stretch it further.

Sounds great. Home cooked and mainly lean meat and vegetables is the way to go.

I lost a lot of weight this year (4.5 stones) and having some go-to easy meals on rotation that I liked made things so much easier as it takes the thought out of it.

You could put some barley or lentils in your stew next time for added fibre.

Stick with cornflour. Those granules are UPF and contain some things you probably don't want to eat.
