I need to use the Metro this week travelling from Central Station and returning the same day i cant make sense of the tickets.

Is the best option to simply buy a return/day ticket at the machine in the station or can you just use contactless at barriers? I saw there was an app but couldn't work well on my device

If you are not going to be using it regularly just buy a paper ticket at the ticket machine it's easier than faffing around with the app. The map on the ticket machine will show you how many zones you need depending on where you are going.

Yes buy a day saver for a return journey at the machines on the platforms. Don’t bother with the app. Keep the tickets to get through the barriers when you exit.

Tyne and Wear day rover bought from the machine £6.80 and you can use it on any bus and the ferry too.

Or Metro day ticket is £6.70, saving 10p

If you're going to use it regularly you need a contactless card, preloaded with money, a bit like TFL's Oyster Card, then scan in and out, or buy a more expensive ticket at the machine, with cash, phone or card, then scan in and out, single tickets are only valid for a limited time after purchase. Unlike TFL (and my local buses) you can't scan in and out with phone or bank card. I agree it's very confusing, it seems that vast numbers of people don't bother paying at all, as at the stations I used there were no physical barriers.
