Frying, roasting, Sautéing..

Can anyone settle this quandary for DH and I?

I tend to roast veg as I prefer the taste, process, etc. DH likes to get things done quicker and plops them into a pan on the hob with herbs/spices and a drop of oil. The same amount of oil is used when he does this as when I use it for roasting. I presume this ought to mean similar calories and health benefits.

Internet told us his way is unhealthy.
He calls it frying, but is he actually Sautéing?
Nothing is steeped in oil or covered with it.
Is it the temps?

I think if you are using the same amount of oil 1 isnt healthier than other.

Here’s the science: to fry in oil you need to heat the oil to a higher temp than roasting. At that higher temp the veg absorbs more oil because the heat forces water out of the veg allowing more oil to seep in. Roasting is done at a more consistent dry heat and lower oil temp. Thus the veg not only absorbs less oil they also retain more nutrients than when frying.
