Can I freeze this? And what to do with 'spare' potatoes?

Do you think I can freeze it? At what point? After it's cooked and then just microwave next time? Or before it's cooked?

Anyway, I'm halving the recipe so I'll have loads of spare potatoes hanging around. If I make them into mash, can I freeze mash? Anything else I could do with them? They won't get eaten anytime soon before they start sprouting so I need to prepare/cook them in some way and freeze. But I need some ideas!

Yes you can freeze
cook
cool
portion it
and then freeze in individual portions.

you can heat from frozen

You can part cook roasties to use up your spare potatoes. Peel and parboil as usual and roast for 20 minutes or so - just until they take on a bit of colour. Cool them and freeze in a plastic freezer bag. They can go into the oven from frozen to finish cooking - you'll just need to add some fresh oil/goose fat whatever.

You can freeze mash but it goes a little mushy. If you can be bothered with the faff then duchesse potato is better.

Baked potatoes freeze well.

Mash freezes fine. I tend to put it through the potato ricer and freeze it loose-ish rather than squashing it into whatever I'm freezing it in. I also don't add anything as always think it needs more butter anyway after defrosting.

I freeze mash in freezer bags, I put enough for 4 servings of my chefs special 'mash on toast', flatten it down and then fold in half and half again so if I need a quick 'mash on toast' It is already in the right size and shape for putting on the toast and under the grill.

But potatoes are ok til spring, before the shoots start sprouting. Unless you eat no potatoes in the next 8 weeks and if you haven't bought like 25kg of them, they will be fine in a dark cupboard.

I do this recipe and it sosent freeze very well. The potatoes absorb too much of the cream and then it is very dry when reheated.

OP I usually freeze roast potatoes. Just take them out the oven about 15 mins before you normally would and freeze.
