Inspired by this article on food disasters, has anyone ever tried any risky substitutions that actually work?

I sadly don't have any successful experiments, though I did find out only recently that honey and cheese go very well together.

I've had a few disasters though. We have carbonara a lot and I once forgot to add the cheese. Also I love duck with port and cranberry sauce, but once when I came to make it I realised we didn't have any port so I tried it with orange wine and marmalade. It was horribly bitter and disgusting!

Old fashioned Colman's mint sauce, bit of yoghurt, bit of cucumber, bit of whatever spice, bit of this, bit of that. And now we have raita!

They''ll never know.

Especially if you put it in a nice dish.

In fact, I have it on good authority that a lot of BIR restaurants do this.
