Breadmaker help please

I've been making my own bread for some years in my old Panasonic.

I know there's a way of stopping the process briefly, to take out the paddle, so that the bread hasn't got a paddle-shaped hole in it.

Can anyone tell me how long to leave it, after I've set it off, when it's okay to remove the paddle and then start the thing up again?

I don't know about instructions for it but from general knowledge of breadmaking:

The cycle will be an initial mixing process, then a period where the mix is kept warm for a while to rise and then kneeded with further paddle movement. There could be a cycle of alternating between these two for a while, then the temperature gets increased to bake the bread.

All you need to do is work out when in the process is the last time the paddle moves. If you remove it at that point, there will be no harm done. You just need to run the cycle listening carefully to when the paddle whirls.

I did think of this.
What do I do about restarting the thing though?

I mean, if I open the breadmaker and remove the paddle, will the programme just carry on when I put the lid back down?

You can just open the lid. As long as you don't press any of the knobs the programme will just keep going.

You want to do it just before the second rise
