Routes into being a professional chef

DS is interested in training to be a professional chef and is trying to work out what the best course would be. He has his sights set on fine dining, Michelin star sort of thing. Are there any courses which are particularly valued by that sort of restaurant? Ant advice would be really helpful, thanks.

He could always try getting some kitchen porter experience to see what being in a kitchen is really like.

Best thing would be to go into some of the places he has aspirations to work in and ask to speak to the Head Chef. They may take him on as a pot wash initially and then begin to train him.

My eldest trained as a chef at a Michelin starred kitchen. They had their own 'academy' where they taught the academic work and then did the practical work in the kitchen. I think they took on 9 or 10 apprentices a year (3 per term).
This was a few years back and the head chef has now retired and the restaurant has lost its Michelin star. It might still have the academy. Certainly worth a Google if there is anything similar where you are.
They became an excellent chef and been offered up to £60k since finishing (aged under 25).
