OK, I am not a baker or jammer ? by nature but I find myself with a surfeit of lemons - the yellow ones. They are not widely available here so I had to buy a net full as opposed to the couple I want for my fish dish. SO...the point is, I love lemon curd (but really only my mum's, RIP) and have never made it....have looked at some recipes online - is it REALLY that easy to make ?
PLUS is this what goes into a filling for a lemon tart (also a favourite and have had many delicious slices here, where cakes rule)
I have about 10 lemons. No, I do not want to make lemonade, Any helpful suggestions welcome ! I would like to stun my friends with a lemon tart at the weekend....💐

I had some leftover once and looked up what I could use them for and lemon curd popped up. Gave it a whirl not expecting much but it was so so nice.

Lemon curd is very very very easy to make. Wash the lemons, grate the zest, squeeze the juice, stick it in a bain marie (pudding bowl propped over a small saucepan of simmering - not boiling - water underneath) mixed with butter and sugar (look up quantities online) and stir it occasionally until it thickens. Done. Some people make it in a microwave but I've never tried. And I love the smell of it floating around the house if made on the hob.

You can use it for lemon meringue pie or lemon tarts or on toast.

You can do the same with limes or oranges.

Lemonade, lemon cake, lemon tart, squeeze them and freeze them in cubes to add to pasta sauces such as garlic and prawns or defrost for a chicken marinade

Lemon curd really is that easy! So is lemon sorbet. You can freeze sliced lemons to put in drinks. I freeze lemon juice in small ice cube trays for cooking. You could get rid of 10 easy peasy!

Mary Berry’s lemon drizzle cake is the best. That’ll use about 2 lemons I think, so with the rest you can make your curd to spread on it or dollop onto meringue and cream etc.

Exactly this. I put a frozen wedge in my G&T, don't need ice.

Yes, it really is very easy to make! And delicious. Agree about lemon drizzle cake.

You can do pasta with lemon or lemon risotto.

Thanks everyone ! You didn't disappoint, I am going to have to try the lemon drizzle recipe obviously. Thanks @Cinaferna and @Endofyear for recipes.
oooh and lemon meringue that would be amazing ! my friends will want to know where @Aintgointogoa is and what have they done to her ! I recently upgraded my counter top oven so it is now capable of doing 'propah' baking.
I'm going to have a crack at the lemon curd today. I fancy a lemon risotto too @Bulbsbulbsbulbs - Nigella has a good recipe I think. I may need to go back to the store for more !
