Sandwiches, sandwiches, sandwiches!

Background - I have a slightly fussy eating 9 year old DS.

Since starting school he's had school dinners, all fine and mostly he can find something he likes. But this year we've said he can have a mix of school dinners and packed lunches throughout the week.

The problem I'm having is working out what to feed him that isn't just a ham/pastrami/salami sandwich. I don't want him eating processed meat multiple times a week and also want him to have some variety in his diet. He loves peanut butter sandwiches but that's a no go for school due to nut restrictions. He will eat cheese in a sandwich but only a toastie!

At a push I can give him tuna and cucumber (says he doesn't like - after previously being a favourite - but he can and will eat it) and he also likes smoked salmon (although salty and expensive so not something for every day!). What other sandwich fillings could I try with him? Or any other creative suggestions for an easy lunch. I thought maybe cold pizza could be an option.

I'm also thinking of maybe sending pasta salad or similar, and looking into getting a hot flask thing to send in leftover chilli, bolognese, soups...

But I'd really like some different sandwich ideas... I'm sat here trying to write a shopping list so I can go out and do the weekly shop before school pick up and I'm drawing a big fat blank!

Mine had pitta bread fingers and hummus every day for what seemed like but probably wasn't several years.

The only sandwich my nephew eats is butter and sliced tomatoes

My DS never liked sandwiches so we’ve done just about every alternative!
savoury muffins
savoury flapjacks
sausage rolls
breadsticks and dip
pasta salad
cheese scones with marmite
mini quiche or frittata
leftover slice of pizza

@Forgottenmyphone

I've just seen your 'cheese scone with Marmite'. Fantastic!
The cheese scone is now on my list for when I go shopping TOMORROW.
Thank you!

You can make a sort of sandwich base with cold mashed potato mixed with salad cream, vinaigrette or sour cream, then topped with chopped raw or cooked vegetables, sliced olives etc. It’s good for stopping small pieces falling out of your sandwich!

My DS is also quite fuzzy. He likes pizza. pinwheels made from puffy pastry. I make them with a homemade pizza sauce (with hidden veg) and mozzarella. So sometimes I just use those as a substitute for sandwiches (I appreciate probably not the healthiest option). He also likes savoury muffins made with grated cheese, carrot and courgette.

Jam.
For my 13 years of education I had a jam or lemon curd sandwich everyday.
(orange curd if being posh)
I still frequently do.
I had a plum jam sandwich for breakfast today 😂
I love my jam sarnies.

Tuna, sweetcorn & mayonnaise pasta

Chicken & tomato sauce pasta

Prawn, sweetcorn & thousand island dressing pasta

Tuna and sweetcorn sandwich

Prawns and mayonnaise sandwich

Chicken & mayonnaise sandwich

Chicken and sweetcorn sandwich

Chicken and stuffing sandwich

Chicken, tomato, mayonnaise, lettuce & cheese sandwich

Chicken, bacon or ham & lettuce sandwich

Cheese, onion & salad cream sandwich (or can use Heinz sandwich spread instead of salad cream & onion)

Ham & Cheese sandwich

Cheese & pickle sandwich

You could also buy sandwich fillers from supermarkets and a thermal food flask for hot meals such as rice, mashed potatoes, macaroni cheese, noodles, meat, fish, vegetables etc.

Best thing we found for fussy kids was to do a few weeks worth of sarnies..tuna, egg, chicken, ham and cheese etc and freezer them. Each morning they choose the sandwich of their choice and add the extras. The sandwich keeps the lunchbox cool til lunch. Was always a winner.

I have heard of freezing sandwiches. Always wondered about this. Do they not go soggy when defrosted?

Thank you for all the suggestions. We are going to do an afternoon tea this weekend with a selection of fillings for both DC to try.
