Crumble recipe

Does anyone have a foolproof recipe for crumble? Mine always end up like dust on top and claggy underneath no matter what I do! Thanks.

To make crumble topping, I use 2oz each of flour, oats, brown sugar and butter all mixed together and put on top of whatever fruit I’m using. That makes 5 or 6 servings in our house.

If it’s soggy underneath your fruit may be too wet?

I tend to ‘fork’ mine around about half way through cooking as it can tend to get a bit dark looking on top, so the paler less cooked topping from underneath is distributed more evenly, if you see what I mean.
I buy ready made crumble topping (tescos) and add some oats to it then dot it with salted butter and Demerara sugar it always turns out very nicely and not soggy

Claggy could also mean undercooking. Up to 45 minutes, gas 4/180. Make sure you add the sugar after you mix the fat and flour to breadcrumbs, not earlier.

Don't pack it down onto the fruit, just sprinkle it over thickly.

Flour
Half weight butter

Chop butter up with a knife in the flour then rub it in using finger tips with cold dry hands

Add sugar that is half the weight of the butter

So eg
160g flour
80g butter
40g sugar

Sprinkle a teaspoon or two of sugar over surface before you put in oven

Is nice with lemon or lime zest grated in
