Cooking Lamb - best way to slow cook in oven?

I’ve got 2 boneless lamb legs each weighing 1.8kgs and I want to cook them long and slow in the oven for dinner tonight. We’ll get to the main course about 8pm.

Do I calculate cooking time as 3.6kg? Or as if it’s just 1x 1.8kg?

How would you cook this meat?

You didn't ask but the above recipe is THE way IMO.

I would probably go somewhere in between the two timings, jusy cook as if cooking one leg of lamb and add a bit extra, 30-45 mins.

Last time I cooked leg of lamb I butterflied it and cooked it on a rack above the roast potatoes. Took about 45 mins. Probably not what you want but was the best result I've ever had.

in a fan oven calculate as per 1.8 as it will make negligible difference that’s there’s 2 joints in the oven also the lack of bone makes a difference, I’ve never slow cooked boneless, I’d actually just roast at a higher heat as leg, what does the packet suggest, I knock 15 minutes off whatever it says in my oven as cooks fast

I use a tom kerridge recipe which is lovely and you slow cook the lamb over boulangerie potatoes takes about 4 odd hours from what I can remember.

Yeah, I usually do what it says on the pack but this time I want it to fall apart rather than be sliced , so I think low and slow in oven this time

Agree with this recipe being the GOAT, I do the Greek version of this with loads of lemon, garlic and herbs, it’s truly exquisite
