Healthy quick breakfast ideas for fussy 8 yo

DC has gone off everything.

We are a healthy household and their breakfast normally alternates between, sourdough crumpets with butter on - very few ingredients, no preservatives, organic white sliced toast with bread from farm shop (literally has 4 ingredients), plain porridge made with full fat milk with a little bit of honey or date syrup, what I call pimped porridge with some mashed banana and whatever nut butter I have on the go (pretty much anything bar peanut).

Stay away from cereal because they are not that fussed and even the supposed healthy ones have a lot of added sugars, also anything to granola'ey takes them forever to chew. They end up getting bored and eating very little.

On a weekend I make eggy crumpets, and buckwheat American style pancakes which they just have with a little bit of melted butter on. Or we have coffee shop pastries if out and about. It's just too time consuming in the week.

I'd rather stay away from anything to sugary but am at a loss tears of frustration all round this week. And given into oatcakes with honey on but again it's the sugar - they do have their teeth brushed right before they leave for day though.

Does anyone have any ideas;

They don't like yoghurt unless it's hidden in a milkshake, don't like oatey flapjakey type things. Won't eat scrambled eggs - that's why I go to eggy crumpets. They also don't like cheese 😩.

You said you do pancakes on the weekends - these are pretty quick to make, if there isn't time in the mornings you could make up the batter the night before then you just need to cook them? Or bulk make a load of batter and freeze and defrost portions the night before etc.

There are some breakfast cereals with very little sugar too but I know you said your DC isn't fussed on cereal. But maybe see? I'm thinking of things like plain wheat bisks, shredded wheat, bran flake type things. Brands vary so you'd have to check the ingredients lists and choose what you're comfortable with.

You said they won't eat scrambled egg, will they eat poached/fried/boiled maybe? Boiled super easy can boil a batch on a Sunday night to last the working week.

Fruit smoothies made with oats and yoghurt. I always add flaxseeds too for omega 3 as I can't get DD to eat fish!

We have a waffle machine and make waffles regularly - it takes 3 minutes to whip up the batter and 5 minutes to cook them. I only use 1 tablespoon of sugar and 1 of oil in my batter.

Banana pancakes - no added sugar at all and actually pretty quick.

Boiled eggs. Or any other kind of eggs except scrambled. All are quick.

MIne won't eat this but I've seen loads of people do little individual frittatas, often cooked in advance.

I buy unbaked frozen pastries that take 12 minutes int he air fryer. But usually keep that as a weekend treat.

Overnight oats - I normally just do basic options with yoghurt, milk, a few nuts and frozen fruit but I've seen options to add cocoa powder and make them a little chocolately that way.

Muffins - I have a quick and easy banana muffin recipe using a mix of flours/oats that I can cook in the airfryer in 12 minites pr, when I am organised enough, I batch cook muffins and freeze. Note, I actively look for recipes that are lower sugar and higher fibre using bran/wholewheat flour/oats etc.

On my list of things to experiment with if I ever get a chance are thos sort of flavoured loaves using oats/chicpeas/gram flour that apparently make great breakfasts. I just never seem to have the time.

Add nut butter to your toast.

Have you thought about non typical breakfast food? Sourdough wrap (easy to make with discard and have in the freezer) with leftover meat/ veg or with an egg? Carrots and hummus? I’ve always hated breakfast food but I just eat normal food now and break the rules.

Egg bites. Make up an omelette mix (eggs veg they like, cheese etc) and put in a muffin tin and bake then cool and store in the fridge. You can even do plain egg. They store and 9 year old feels he is in control.

Agree with @Chocolatecustardcreamsrule . I knew someone who always saved mince leftover from bolognaise or shephers pie and would have that on toast for breakfast for the next few days.

What about avocado on toast or in a wrap - add a bit of feta or other cheese for extra flavour.

Beans on toast.

Bacon sandwiches.

I must write all these down for myself - we've been in a rut recently! Grin

I make these once or twice a week,

9 and 5 year old love them with blueberries and a drop o maple syrup and any leftovers go in the fridge to pop in the toaster the next morning!
