ADHD & disability Friendly lunch ideas (healthy) please!

I need to lose some weight, and atm lunch is my problem meal.

I never know what to eat.

Obstacles:
If it requires prep i'm not going to eat it. I mean i can make a sandwich, or stick some toast on, but i'm not going to stand there and take more than 2-3 minutes to make something (this is both attention and fatigue/pain related)

Currently i would quite happily grab and go.. some something i can just go right from fridge/cupboard to plate to mouth.

I'm not a fan of meal prep, i have anxiety around food that has been in the fridge more than 1-2 days from previous brushes with food poisoning.

Yes i know i'm a pain, this is why i'm struggling. I need ideas for quick, healthy, grab and go type lunches that aren't going to cost me a fortune.

Pre-prepared veg has a few options
Stir-fry mixes
Meditereanean veg

They're easy to customise into different meals with few stages of processing stacking up.

You can buy frozen packs of ready to use meat such as cooked chicken strips which are low risk and low effort.

Microwave rice sachets (can be heated in the pan to cut the microwave stage)
Straight to wok noodles

I find it less faff than making sandwiches

It's extra easy with my air fyer that has several options of cooking method.

Jacket potatoes are another option.
Tinned chilli con carne is surprisingly good. Canning preseves it without needing to ultra-process it with additives.

I'm exactly the same, I can cook, I even enjoy cooking for friends and family, but when it's just me, I'm not going to do it...even when full of good intentions I've bought the ingredients.

The things I reach for for a healthy(ish) no fuss lunch are eggs, in all their forms, hummus and pitta/carrots/beetroot, Greek yogurt with berries and nuts, celery and cream cheese.

I do meal prep, but always low risk foods like veg soup or salad, that I can easily have along side something like tinned sardines or cheese.

I generally meal prep, but have some other options that might work for your.

If you can sometimes batch cook and freeze food, then you can freeze it in single portion silicone soup freezer trays (like giant ice cube trays) and defrost soup to eat with bread, or a chilli/curry/stew to eat with microwave grains.

Or use fresh supermarket souo.

I also like to make a filled pitta sandwich with some combination of hummus/tinned fish/some sort of beans/cucumber/tomato/lettuce/maybe some olives or grated carrots and that is very quick with less than a minute of chopping.

A snack that can easily be adapted into a lunch is hummus, veg sticks and some toasted pitta bread.

Or a tin or ratatouille mixed with a tin of pulses.

A bag of pre-made salad plus a portion of pre-cooked protein (tuna, chicken, pulse, egg etc)
