Cauliflower cheese - what kind of cheese to use?

The Sainsbury's TTD product is made with Cheddar, regato and emmental and it's very tasty. I've never made it for myself so would be interested to know what other kinds of cheese would work well. I imagine anything that melts readily would be good, e.g. double Gloucester or gruyere. Perhaps a little blue cheese for piquancy?

Same for broccoli cheese, BTW. Thankyou.

Try using a wedge of brie (with English mustard and any bits of cheddar languishing in the fridge) it is to diet for!

Good call on the nutmeg.

Ive used edam in the past as well added to other cheeses, it has a 'cheesy' taste to it that ehances the other cheeses.

I normally just use Cheddar with a big dollop of mustard in the sauce. I wouldn't use blue, as despite being slightly obsessed with it, warm blue cheese (IMO) is rank.

I agree it gives off a horrible hot tangy taste!

Op i either use cheddar or sometimes white Gloucester, i don't like mustard so I put a splash of worscter sauce in it.

Thankyou for your continuing suggestions. It seems that blue cheese is out of favour here but otherwise anything goes. Ultimately all a matter of taste.

I would use a nice tasty cheddar as I always have some in the fridge and I like lots of cheese. I love gruyere but it's too expensive to be used in any quantity. Can't stand blue cheese or parmesan.
