ah, thank you @Redheadedstepchild this is the thread that keeps on giving.😂

I do have a 1980's video of the legendary French cook, Maite eating an ortolan in my horrible cooking library but I will only post that if enough people want to see it.

I will not be held responsible for any psychological damage caused.

For all you retro cooking fans, here's a playlist of, "Farmhouse Kitchen" broadcast by Yorkshire TV from 1971 onwards. In case you didn't want the ortolan.

Was Farmhouse Kitchen the one where the farmer's wife was making something using blood and the male presenter nearly threw up. She just turned to the camera and rolled her eyes. Brilliant.

Edit: I don't think it was. The one I'm thinking of was on a real farm not in a studio.

That was disgusting. Positively pornographic. 🤮

It made Mary Berry's pig's trotter look quite tame.

Wasn't that a very hungover Nick Nairn and a home made black pudding?

Also a fan of Farmhouse Kitchen which I watched with my mum and still have a recipe book.

My mum thought Mary Berry was too posh because of the early days cut glass accent, and could never quite come round to her on Bake Off. Mum will be tutting in her grave as I use lots of MB recipes now, especially her Christmas Cake 🎂

Redheadedstepchild · 02/07/2025 17:48

@CaptainMyCaptain That would have made an interesting episode with Mary and Judith, wouldn't it?.

"So what have you got here for us today, Mary?"
"We should always make use of the more economical cuts of meat, shouldn't we, Judy? What I am preparing here today is something that is unfairly overlooked. No bones, very easy to make tasty with a..."

One does not wish to be vulgar.

Ha, when I wrote that post I was trying to think back as to whether we defrosted them or not 😁 I still can’t remember but I suspect a bit of both.

Wait, they were supposed to be defrosted?? I was today years old, etc etc

Yes. Nick Nairn! Her expression of contempt was priceless.

That's amazing. I wouldn't recognise Mary Berry's appearance or her voice. Usually I can recognise people from their voice. She's fantastically modest and nice isn't she?

Have you heard her on the Gales Brandreth Rosebud podcast? Her life is very interesting especially her career history for a woman of her time. She had a good job with the Dutch tourist board promoting Dutch food and her dad went to see them after she was offered the post to check everything was in order! Her family had money but she always worked.

What's your method for making herb oil for freezing please? Do you cook it or just chop loads of herb and mix with oil?

Massive handfuls of fresh basil (with or without a few cloves of garlic depending on your preference) and about 150-200ml of olive oil into a saucepan. Heat it gently for about 10 minutes and leave to steep and cool. Then whizz it up in a blender.

I freeze some in ice cube trays and keep the rest in the kitchen to use. It's lush.

It works with other soft herbs too but basil and garlic is my favourite.

The brightness had quite the Keith Floyd vibe. I bet he ate it at some point.

PickAChew · 02/07/2025 23:35

I watched some of the Christmas Farmhouse Kitchen, BTW, and it was surprisingly wonderful. Lovely cooking and lovely crisp accents but by, they had some terrible lungs!

As a sewer, I was working out how the blouses were constructed, of course.

Me too! I have lots of bones for stock, herbs etc. I'm a child of the 70s, obviously.

Loved the Victoria Wood and Julie Walters sketch, too.

We do have a trotter in our freezer from the half pig we bought earlier in the year. We’ll use it to make pork pie jelly at some point.

Thank you for these!

BTW I remember the crushing sadness of the summer months when my mother proclaimed old potatoes to be over. We would suffer boiled new potatoes until autumn arrived and roast, mashed and jacket potatoes reappeared. This went on into the 90s IIRC.

Oh my gosh I LOVE the yorkshire ladies! What age do you think the blonde woman is? I find it really hard to estimate people's age from old tv as they just have the hair styles my granny would have had (just like I'm sure my mum bob ages me to a teenager!)

A little detective work tells me she was 50.
