Tell me what I need to book ahead in Amsterdam?

Already booked the Anne Frank House as I have already been told this is something that needs to be booked.

Our preferred mode for holiday is to be pretty relaxed and decide on each day as it comes whether we want an active day, a cultural day or a chill day of not much. What I don't like is deciding that a particular museum or attraction looks great, only to find that I needed to book 6 weeks ago and you can't really just rock up. If you know Amsterdam well, are there any unmissable attractions that get fully booked if you don't plan ahead?

If you want to go the Van Gough museum it needs to be booked up..
If you like cats there is a small museum of cat portraits and near the central station a barge which is a cat sanctuary, which you can visit at certain times which my kids loved.

If you like modern and street art, the STRAAT is brilliant. Pretty sure we just rocked up but you can book ahead.

Van Gogh and the Pantry as said up thread. Liked the Pantry a lot, it was a nice atmosphere although it was fully booked on our last visit. They do keep some places back for walk ins but there’s always a queue.
Every where else was fine, Straat, Rijksmuseum etc we just paid at the door or online just before going in.
Maybe the Heineken Brewery, we didn’t end up going but a few slots were sold out.

We went at February half term and booked the Anne Frank House and the Resistance Museum. Rijksmuseum we just turned up and didn’t bother with the Van Gogh Museum (been before). It’s a lovely city to just walk about, stopping at cafes etc. We did go on a canal boat trip but there were loads of options for those. We also went to the Tony’s Chocoloney shop as we were with a pre teen child, and would have gone earlier in the day if we’d known how long the queue was going to be!
