What do you cook your curries/jambalaya type dishes

Hello,
We're having a debate about what pan to cook curries/jambalaya in. I've been using a cast iron frying pan type thing but it's not quite big enough so looking to get something different.

DH says we can just use a saucepan, but seems wrong for some reason. According to ChatGPT we should use a saucepan however..

What do you guys use?

Large saucepan - 24-28cm, to give you good frying-the-onions-and-spices room for the spatula work at the start, simmering later. Or transfer: I sometimes use a wok to get all the frying done, then shift to the big saucepan once it's time to be throwing in the cans of tomatoes/coconut milk etc.

Similar sort of thing to the one posted.

But it does depend how many for. When just dh and I at home I will sometimes use the big frying pan. When we had the whole family here then always the slow cooker.

A big round-bottomed frying pan from TK Maxx. Almost like a wok, but the flat part is bigger. They’re good and deep, so you can fit a good amount of bolognese etc in there.

A big le creuset cocotte type pan.
Especially for jambalaya because it holds the heat to make the roux.
