Will this bolognaise last til Thursday?

I bought frozen mince last week. it went into the freezer immediately. If I defrost it today, and make bolognaise (or maybe chilli), then put it in the fridge when cool, will it still be ok on Thursday evening?

I usually eat things as soon as they are cooked and (for some reason) get nervous about leaving meat a day or two

It will be fine! I’m normally happy with 3 days in fridge for cooked meat meals, 4 at a push. If you are worried though as you’ll have cooked it you can re freeze.

Yes it should be fine.

If you can put it into an airtight container while still hot, even better! I do this regularly and keep things up to 4 days- although most is veggie / vegan not meat.

Friday would be the last day I would eat meat cooked on Tuesday..
You can freeze the Bolognese/chilli and defrost it to eat otherwise.

Yes it will be fine as long as you reheat it to at least 74 degrees. I would make fresh spaghetti though. Pasta is not good to reheat.

Sorry, one last question - would I be better freezing it tonight (once cooked) then taking it out the freezer on Thursday morning, to defrost during the day before reheating on Thursday night?

I take frozen pre cooked meals out of the freezer 24 hours before I need them and put into fridge.

However I’d also have it left in fridge if I cook it for 3 days.

You shouldn’t freeze food that has been previously frozen. By cooking the bolognese you are heating to a high temperature, simply cool in the pan you cooked it in and out in the fridge until Thursday. Reheat in the same pan. Don’t freeze again.

If you cook it inbetween then it's fine.
You can cook with meat that has been frozen and then freeze the meal, because the cooking destroys most of the bacteria. You can't freeze, thaw, then freeze again without cooking it, unless you have meticulous thawing regimes in the fridge.

That's not correct, it is absolutely fine to freeze cooked meat that was previously frozen.

OP I definitely wouldn't bother freezing and thawing in your case though, and if anything the bolognaise will taste better for sitting in the fridge for a couple of days- the flavours get a chance to develop. I do this all the time.

That’s only if it’s not been cooked. OP would be fine to freeze the cooked mince but it would be a waste of time in this case.

It will be absolutely fine - no need to freeze it. You’ll find that it will actually taste better for being left for a couple of days.

I’ve often re-frozen something - tasted fine and nobody died.

Yes it will be fine! It will be more delicious.

Perfectly safe to freeze the cooked meal. You cannot refreeze defrosted meat.

The things you need to be carful with are rice, large joints of meat frozen on their use by date (looking at you Christmas Eve turkey - you cost £4 but will take 48 hours to defrost?), and shell fished cooked and frozen at sea. Although this is now labelled as safe to refresh I’m still dubious.
