Is this the right temp for lamb shoulder??

First time cooking a whole shoulder of lamb and I’m STRESSED!

Weight is 2.5kg, currently got it tightly covered in the oven (put some water in the tray) on 140 degrees (fan oven) for 4.5hrs? Been told to ramp up the heat to 200 degrees during the final 30 mins?

Is this right?!

Other way around - 30 mins at high temp uncovered - to get some colour and heat up the meat. Then cover and low temp rest of the time. That's what I would do.

Yes I would uncover it. It sounds okay to me on time/temp.

Uncovered the last 30 mins if you are doing it that way. (Lamb shoulder is very forgiving so will no doubt be delicious) leave it time to stand and rest before serving.

And use a meat thermometer to check the temperature.

I’ve browned mine first as it gives it more flavour and a nicer colour. It’s in the slow cooker for 6 hours but the Nigella recipe I’m following says oven at 150 for 5 hours. I just don’t want to put my oven on!
Most important part is low and slow so you might need more than 4.5 hours. If it’s not falling apart by then keep it in for longer.

Edited to say don’t forget to rest for 15-30 mins before you carve.

The temp will be fine after such a long cooking time, so you won't need to check if you don't have a thermometer. As above, if it's not falling apart you just leave it in a bit longer.
