let me know a good bread, or other easy lunch

there was a thread in which a donut was felt to be similar nutrition wise to a supermarket bread.

apart from making your own soda bread
what else would you eat on a healthy diet
lunch and or breakfast.

I would avoid bread and just have it occasionally, rather than thinking of it as the main part of a meal.

other easy lunches: omelettes, jacket potato, soup, noodles. Think of a protein you like and then add lots of vegetables, either as a salad, or hot/ reheated.

I buy Jason's sourdough but generally we all just eat less bread. Tend to make soup in the colder months salads in the summer with chickpeas/cous cous etc. Will have eggs or beans on one piece of sourdough toast.

For lunch I tend to avoid bread. I make hummus and top it with roasted veg and a sprinkle of feta, or make substantial chopped salads with chickpeas in (they don’t tend to contain leaves so last a few days in the fridge)

For breakfast I usually have skyr( high protein, low fat Icelandic yoghurt) with frozen berries and cinnamon, sometimes with nuts, honey or no added sugar granola if I am hungry.

For lunch rye or sourdough crackers with limousine, or soup then fruit.

If I need bread, I usually have Warburton no added sugar wholemeal, toasted with boiled or poached egg.

Most of the things you can put in bread, you can put in a salad instead.

We tend to make bread twice a week though. Yeasted rather than soda bread.

Wraps and thins are still crap processed bread generally. You could make own wraps, or crosta and millica do some unprocessed wraps.

But generally flour and bread is not going to serve your energy levels well for the afternoon.

I eat fruit flax/chia and kefir for breakfast, I try to get at least 15g of fibre for breakfast plus 40g protein.

Massive salad for lunch with a couple of chicken tighs or a large breast, lots of raw pepper, sugar snaps, leaves, cherry tomatoes, sometimes beetroot, grilled pepper, sometimes jar artichokes, roast veg. Whatever I have in the fridge.

I'm not a big carb person though and would rather use my calories for other things, if you are you can add lentils or chickpeas or other pulses or beans.

Oh and I bought a couple of big glass 'tupperware' dishes from txmaxx. They allow space for the big salad and it's so much nicer than eating out of plastic.

Veg soup, lentil soup, chowder, Scotch broth
Home made mackerel pate and ryvita
Salad leaves, a light vinaigrette with some protein like chicken with some nuts or salmon with a few cooked new potatoes
Rice salad, pref brown, with roasted veg, chilli flakes and a drizzle of oil plus some fresh herbs
puy lentils, finely diced tomatoes and salad onions, pink grapefruit or pomegranate, seeds if you want and a little dressing
Asian slaw
Waldorf salad
Cheese and fruit
Finely long sliced courgette, griddled, grilled halloumi and fresh mint, drizzled with olive oil and balsami
Chickpea salad
Omelettes
jacket potato
roasted squash with herbs
